This keto eggplant lasagna is a bit of a splurge but it is worth every bite. This cheesy dinner is a family favorite.

Is Eggplant Keto?

Even though eggplant isn’t the vegetable with the least amount of carbs, it can still fit into a keto diet. You just have to watch your macros and adjust accordingly. There are 6  net carbs in each 1-cup serving.

I love using my cast iron skillet for this recipe. It makes clean-up easier since it only uses one pan for the entire recipe – both stovetop and oven. If you don’t have a cast iron skillet, get one. Trust me, it’s worth every penny.

This recipe is an easy and healthy way to enjoy lasagna on a low-carb diet. You don’t have to give up those recipes entirely, you just have to find low-carb ways to enjoy them.

This lasagna recipe has the same classic flavors and textures as lasagna with noodles – but far fewer carbs. 

Skillet Lasagna With Ricotta

Since this recipe uses eggplant, you’ll want to use natural ricotta cheese that is low in carbs. There are some brands that have more carbs than others. Anything you can do to keep the carb counts low will help you out.

Also, remember to use a sugar-free marinara sauce. Some brands sneak sugar into the sauce, even though it really doesn’t need to be sweetened.

The sausage is optional. Replace it with either ground beef or chicken. 

What To Make With Eggplant 

This is one of my favorite ways to cook eggplant. It replaces the lasagna noodles seamlessly. I’ve used eggplant in other recipes too. It is really delicious baked with parmesan. It has a very mild taste that can go with almost any combination of spices that you add to it.

Keto-Friendly Lasagna Dinner

This lasagna is a low-carb dinner that your entire family will enjoy. To make it a complete meal, serve it with some cheesy keto garlic bread, a simple salad, and some bacon-wrapped Brussels sprouts on the side.

How To Prep Eggplant For Lasagna 

Before you make the lasagna, you’ll need to slice the eggplant into thin slices. They should resemble lasagna noodles. Then, roast them in the oven. After they are fully cooked, they are ready to be layered into a lasagna.

Eggplant lasagna is the perfect dish to add to your meal prep. Cut it up into smaller slices and store it in airtight containers. Keep it in the refrigerator. It will stay fresh for up to 5 days.

You are going to love how this smells as it bakes! When it comes out of the oven, sprinkle it with some mozzarella cheese. This is optional – it does add a few more net carbs – but it is definitely worth it.

Another way to enjoy a low-carb version of lasagna is to make keto lasagna in a bowl. This is another super-easy meal that you can make for one person or an entire family. 

Keto Eggplant Lasagna Recipe

Ingredients:

Eggplant
Olive Oil
Ricotta Cheese
Egg
Parmesan Cheese
Ground Italian Sausage
Minced Garlic
Low-Carb Marinara Sauce

Instructions:

Preheat the oven to 400 degrees.
Place the eggplant slices onto a parchment lined baking sheet. Drizzle with the olive oil and salt and pepper to taste. Bake for 10 minutes and let cool.

While the eggplant is baking, cook the sausage until completely browned in a skillet on the stove.
Add the minced garlic and salt and pepper to taste. Saute another 30 seconds.

Stir the marinara sauce into the meat mixture and remove from the heat.
In a bowl, mix together the ricotta cheese, egg, parmesan and salt and pepper to taste. Reserve a small amount of the ricotta mixture to garnish the top of the dish.

Place a layer of the eggplant noodles in the bottom of a well greased oven-proof skillet.

Top the eggplant layer with ½ of the meat mixture.

Add half of the remaining ricotta mixture to the top of the meat.

Place another layer of eggplant noodles in the skillet.

Spread the rest of the ricotta mixture on the “noodles” and then top with the meat.

Add dollops of the reserved ricotta mixture to the top of the dish.

Bake for 15-20 minutes.

Let sit for 10 minutes before serving.
