I love using my cast iron skillet for this recipe. It makes clean-up easier since it only uses one pan for the entire recipe – both stovetop and oven. If you don’t have a cast iron skillet, get one. Trust me, it’s worth every penny.

This recipe is an easy and healthy way to enjoy lasagna on a low-carb diet. You don’t have to give up those recipes entirely, you just have to find low-carb ways to enjoy them.
This lasagna recipe has the same classic flavors and textures as lasagna with noodles – but far fewer carbs.
Skillet Lasagna With Ricotta
Since this recipe uses eggplant, you’ll want to use natural ricotta cheese that is low in carbs. There are some brands that have more carbs than others. Anything you can do to keep the carb counts low will help you out.
Also, remember to use a sugar-free marinara sauce. Some brands sneak sugar into the sauce, even though it really doesn’t need to be sweetened.
The sausage is optional. Replace it with either ground beef or chicken.

Before you make the lasagna, you’ll need to slice the eggplant into thin slices. They should resemble lasagna noodles. Then, roast them in the oven. After they are fully cooked, they are ready to be layered into a lasagna.
Eggplant lasagna is the perfect dish to add to your meal prep. Cut it up into smaller slices and store it in airtight containers. Keep it in the refrigerator. It will stay fresh for up to 5 days.

Ingredients:
Eggplant
Olive Oil
Ricotta Cheese
Egg
Parmesan Cheese
Ground Italian Sausage
Minced Garlic
Low-Carb Marinara Sauce
Instructions:
Preheat the oven to 400 degrees.
Place the eggplant slices onto a parchment lined baking sheet. Drizzle with the olive oil and salt and pepper to taste. Bake for 10 minutes and let cool.
While the eggplant is baking, cook the sausage until completely browned in a skillet on the stove.
Add the minced garlic and salt and pepper to taste. Saute another 30 seconds.
Stir the marinara sauce into the meat mixture and remove from the heat.
In a bowl, mix together the ricotta cheese, egg, parmesan and salt and pepper to taste. Reserve a small amount of the ricotta mixture to garnish the top of the dish.
Place a layer of the eggplant noodles in the bottom of a well greased oven-proof skillet.
Top the eggplant layer with ½ of the meat mixture.
Add half of the remaining ricotta mixture to the top of the meat.
Place another layer of eggplant noodles in the skillet.
Spread the rest of the ricotta mixture on the “noodles” and then top with the meat.
Add dollops of the reserved ricotta mixture to the top of the dish.
Bake for 15-20 minutes.
Let sit for 10 minutes before serving.
