Green goddess salad dressing was invented back in the 1920s. The original recipe used to contain mayonnaise, sour cream, parsley, chives, anchovies, lemon juice, and vinegar. The parsley and chives were the only green things about it.
The name came from the “Green Goddess” play that a famous actor played in. Lots of history, I know!
Since then, people have put their own little spin or twist on this recipe. The thing that didn’t change is the tanginess – some sort of vinegar or lemon juice mixed with creamy mayonnaise and bold Dijon mustard.
Keto Green Goddess Dressing
I tried to keep the classic flavors in my egg salad, while also keeping it low-carb. I added some fresh chopped dill for the incredible taste, and used lemon juice to stay true to the classic recipe.
If you want it to be spicier, you can use spicy mustard instead of Dijon mustard. I used Dijon to stay as true to the original recipe as possible.
You can use this recipe on other salads too! Make a chicken salad instead of an egg salad. Or use the dressing on a homemade keto cobb salad. The options are pretty endless.
Green Goddess Egg Salad
This is a very healthy salad, with lots of nutrients. This egg salad recipe is packed with protein, healthy fats, and fiber. Did you know that spinach is a fantastic source of iron? It’s a great choice for people who are anemic.
The chopped celery is optional, but I love the crunch it adds to the salad. Plus, it has so much fiber that it lowers the total number of net carbs in each serving. This salad only has 1 gram of net carbs in each serving!
Eat this for lunch and you can enjoy 3 or 4 servings without screwing up your macros!
Egg Salad With Avocado
This egg salad is a wonderful idea for your meal prep. Even though I used avocado, it won’t turn brown as quickly because I added lemon juice to it. Keep it in an airtight container in the refrigerator for up to 3 days. It won’t be as tasty after 3 days.
Avocado is one of my favorite things to eat on a low-carb diet. It is creamy and goes with almost anything. Plus, it’s high in healthy fats, so it fills me up and keeps me feeling full for longer.
Egg Salad Ideas
Since I made this salad with baby spinach and celery, you can literally just eat it like it is. For a complete lunch, serve your favorite soup on the side. I think this keto creamy Tuscan sausage soup will taste perfect with it.
If you leave the celery and baby spinach out, you can serve this egg salad in lettuce wraps. Or spoon it onto your favorite type of keto bread. Be creative and eat it how you like!
