Buffalo Ranch Keto Egg Salad
What is one of the most iconic flavors that you’ll find in sports bars on game day? Buffalo chicken. I took this classic wings recipe and turned it into one of the best egg salads you have ever tasted.
There are lots of ways to enjoy this salad. Serve it as a dip with cucumber slices (or some cucumber chips). Spread the egg salad on your favorite slice of keto-friendly bread as a spicy buffalo salad sandwich. Or serve it in a lettuce wrap for an even lower-carb sandwich.
Spicy Egg Salad
Not only will this spicy egg salad wake up your taste buds, but it’s incredibly budget-friendly too. This is one of my favorite recipes to make for game days and big parties because it feeds a bunch of people on the cheap.
And everyone loves it too! They don’t even know it’s low in carbs.
I like to dip cucumber slices into it or sliced bell peppers. People who aren’t on the keto diet can just dip their potato chips in or even make small little sandwiches out of this egg salad.
What Is Buffalo Sauce
Buffalo sauce is basically a really creamy hot sauce. You can make your own buffalo sauce by adding melted butter to your favorite hot sauce.
Hot sauce is made with hot peppers, vinegar, and salt. Add some melted butter to that and you have buffalo sauce.
Some people don’t like how buffalo sauce has a buttery undertone to it. If you are one of those people, just substitute any kind of hot sauce instead of the buffalo sauce in this recipe. It’s a 1:1 substitute that’s easy to make.
Spicy Egg Salad Keto
If you are going to make this recipe ahead of time, I suggest just boiling the eggs and chopping up the veggies. Then, all you have to do is mix it all together and serve.
After the egg salad is mixed together, it will only stay fresh in the refrigerator for up to 3 days. After about 2 days you’ll notice a little separation happening in the dressing – it’s safe to eat, just doesn’t look as appealing.
You can keep hard-boiled eggs in the refrigerator for up to a week. So, if you need to save yourself time, do that step first.
Healthy Spicy Egg Salad
This egg salad is really good for you! Eat it as a lunch – with some keto garlic knots – or as a snack. It’s high in protein, fiber, and healthy fats.
Plus, it’s a completely different taste and texture than other chopped salads you might be used to.
Change it up however you want. Add some shredded rotisserie or canned chicken to the buffalo salad. Then, it will taste like your favorite hot wings. Garnish with some jalapenos for a little more color.
As always, read the nutrition labels before you use them. Buffalo sauce, ranch dressing, and mayonnaise are normally low-carb already. Just be sure to avoid anything that has added sugar as an ingredient.
