This keto creamed spinach and chicken casserole is a filling meal that defines comfort food. It’s so rich and flavorful that you’ll crave it!

If you enjoy a rich and creamy spinach dip, then you are going to really enjoy this recipe! Every single bite is rich and savory, mild enough for children to enjoy, and full of healthy fats that you need when you are on the keto diet. 

Keto Creamed Spinach and Chicken Casserole

This recipe is full of dairy ingredients. If you are lactose-intolerant, I suggest making a keto creamy Tuscan chicken skillet. The sauce is made with coconut milk instead of heavy cream. It has a lot of similar ingredients to this one – but you make it in a skillet instead of baking it in the oven. 

Keto Spinach Casserole

When you make this casserole, I suggest using fresh, raw spinach. It will have the fullest flavor and give you the best texture. Frozen or canned spinach is already wilted and will have too much moisture in it. This could water down the casserole, making it less creamy. 

Keto Creamed Spinach and Chicken Casserole

Since this casserole is made with cream cheese, parmesan cheese, and heavy whipping cream, the casserole will solidify when you store it in the refrigerator. Keep it in a sealed container in the refrigerator for up to three days.

When you reheat it in the oven or microwave, the creamy filling will melt again. 

Keto Chicken Spinach Casserole 

The best thing about this casserole is that it is a wonderful way to use up leftover chicken. You can use either chicken breasts or chicken thighs. You can even save time and just shred some rotisserie chicken or mix in some canned chicken.

If you want the casserole to have a bolder flavor, then add your favorite spices to the chicken. I like to add oregano, parsley, and basil to chicken. 

I also love the crunchy topping on this casserole. Crushed pork rind crumbs add more flavor and texture to this creamy dish.

I love to serve either broccoli, cauliflower, or green beans with chicken recipes. These keto air fryer fritters are the perfect thing to add to the dinner table. Or add this easy keto broccoli salad to the meal. It’s cold and fresh and has the best flavors.

For a burst of flavor, make some buffalo cauliflower hummus and eat it with some celery sticks. Low-carb green beans and bacon is another dish that will taste divine with this chicken casserole.

If you want to make this ahead of time, I suggest layering all the ingredients into the casserole dish, covering it with foil, and keeping in the refrigerator for up to three days. Then, all you have to do is bake it for 20 minutes.

Ingredients:

Spinach raw
Minced garlic
Heavy whipping cream
Onion
Cream cheese 
Parmesan cheese grated 
Pork rind crumbs
Shredded chicken
Butter
Salt and pepper 

Instructions:

Bring a pot of water to boil, and add the spinach until wilted.
Rinse the spinach under cold water immediately, and drain completely of water.
In a skillet over medium heat on the stove, melt the butter.

Saute onions in the butter until softened and then add garlic to the skillet, and saute another minute.

Mix the cream cheese into the skillet until melted.

Pour the heavy whipping cream into the skillet, whisking as you do. Sprinkle half the parmesan cheese into the skillet.
