Spinach raw
Minced garlic
Heavy whipping cream
Onion
Cream cheese
Parmesan cheese grated
Pork rind crumbs
Shredded chicken
Butter
Salt and pepper
Instructions:
Bring a pot of water to boil, and add the spinach until wilted.
Rinse the spinach under cold water immediately, and drain completely of water.
In a skillet over medium heat on the stove, melt the butter.
Saute onions in the butter until softened and then add garlic to the skillet, and saute another minute.
Mix the cream cheese into the skillet until melted.
Pour the heavy whipping cream into the skillet, whisking as you do. Sprinkle half the parmesan cheese into the skillet.
Stir in the chicken and spinach, as well as salt and pepper to taste.
Spread the mixture into a well greased casserole dish.
In a bowl, combine the remaining parmesan cheese and the pork rind crumbs.
Sprinkle the mixture over the casserole.
Bake in a 350 degree oven for 20 minutes.

- 4 ounces Cream Cheese softened
- 1/2 cup Parmesan Cheese grated
- 1/3 cup Pork Rind Crumbs
- 1 pound Shredded Chicken
- 2 tbsp Butter
