Meatball Eyeballs
Aren’t these meatballs the cutest things ever? They are perfect for spooky season.
The marinara sauce looks like blood, so they look like gooey icky eyeballs! It’s the perfect thing for kids to laugh at as they eat them.
And they will also fit in at any party. Serve them as individual appetizers or as an entree for a full meal.
And the best part about them is that you can make them in a bunch of different ways. Keep reading and I’ll share some of my favorite tips an tricks.

Keto Meatballs
I love making keto-friendly meatballs! Do a quick search here on my blog for meatball recipes and you’ll find a bunch of my favorite recipes.
I’ve made cottage cheese meatballs, spicy Cajun chicken meatballs, and keto Swedish meatballs. After making so many different varieties of keto-friendly meatballs, I knew that I wanted to decorate some meatballs to look like eyeballs.
I made the meatballs out of ground beef, egg, and pork rind crumbs instead of bread crumbs. This combination made the meatballs taste just like typical meatballs.
You can’t tell that they are low-carb. I made six meatballs and there are 3 grams net carbs in each one.
Keto Meatball Eyeballs
Decorating them as eyeballs was so easy! To make the whites of the eyes, just melt some mozzarella cheese on top.
I love how easily the mozzarella cheese melts, but you can choose to melt either white cheddar or provolone cheese instead. Then, for the iris, slice some black olives and add them on top.
If you wanted to make the eyes blue, slice a blueberry and use them as the iris. They won’t taste very good with the savory meatballs but they will look perfect on top. Have fun with them!
Do you want to make the eyeballs look bloodshot? Then drizzle some marinara sauce on top.
Halloween Meatballs
There are so many different types of food that will taste delicious with the meatballs. Serve them with your favorite type of pasta.
I like palmini linguine noodles or spaghetti squash. And a slice of keto pumpkin spice Dutch Baby will taste ideal with the savory meatballs.
Then, for dessert, make keto cinnamon brown sugar zucchini cake. It’s so sweet without adding much to your macros.
For a seasonal treat, make a batch of keto pumpkin cinnamon muffins.
How To Store Meatballs
Use the meatballs in your meal prep. Either give yourself something to laugh about later in the week and keep the olives on top or store them without the olives.
Keep the cooked meatballs in an airtight container. Eat them within three days.
Can you use frozen meatballs in this recipe? Yes, you sure can. But it might be difficult to find keto-friendly frozen meatballs.

Ingredients
- Marinara Sauce
- Ground Beef
- Egg
- Parmesan Cheese
- Crushed Pork Rind Crumbs
- Minced Garlic
- Italian Seasoning
- Mozzarella Cheese
- Black Olives
Directions
Preheat the oven to 350 degrees. Knead together the ground beef, egg, parmesan, pork rind crumbs, minced garlic, Italian seasoning and salt and pepper to taste until well combined.
Form the meat mixture into evenly sized meatballs, and place into the tray of an air fryer.
Cook at 400 degrees for 12-15 minutes until done to your liking. You can alternatively bake the meatballs as well for the same amount of time if desired.
Spread the marinara sauce into the bottom of a 9×13 baking dish. Place the meatballs into the baking dish with a little room between each one.
Cut the cheese slices into fourths, and place one fourth of a slice on the top of each meatball.
Place the meatballs into the oven until the cheese has melted over them. Top each meatball with one sliced olive.

- 4 slices Mozzarella Cheese
- Sliced Black Olives
Instructions
