Olive Cheeseballs
Making spooky recipes for Halloween parties that I can eat on the keto diet is one of my favorite things! These cheeseballs might not look like any cheeseball you’ve seen before – they are even better!
Instead of a hard ball of cheese, this cheese is whipped and piped on top of a crispy low-carb biscuit. Then, a stuffed olive is placed on top to look like a bloodshot eyeball.
It is pure culinary creativity!
Olives make the perfect eyeballs! I used them before to make marinated mozzarella cheese eyeballs. The result was perfectly creepy.

Cheese Ball Eyeballs
To make the cheese topping, I just whipped up and piped some pub cheese spread. There aren’t any carbs in pub cheese! So, to keep the carb count low, I made the biscuits out of fathead dough.
Fathead dough is a mixture of mozzarella cheese, almond flour, egg, and cream cheese. I’ve used it before to make keto crack biscuits.
It always comes out with the perfect texture and there are so many other ways to use it.
Halloween Cheeseballs
If you or your child are learning how to use a piping bag for the first time, this is a fantastic place to start. Since you won’t be piping a specific shape or design – just a round circle – it’s a great way to practice how to hold and pipe the cheese.
You can even use different piping tips to see what kind of effects they make.
You don’t have to pipe the cheese, though. If you’d rather make a classic round cheeseball on top, follow the instructions in my Keto Mini Pumpkin Cheese Ball recipe.
This recipe will taste just as good with piped Pub cheese or with a harder, more solid cheeseball. Do what works for you and what you have in your kitchen.
Keto Cheeseballs
I do not recommend making these cheese balls ahead of time and trying to store them in your refrigerator. If you store them after you assemble them, the cheese will soften the biscuits and the texture will eventually change.
Instead, I suggest storing the biscuits, cheese, and olives separately. Then, right before you serve them, pipe the cheese and add the olives.
It takes like 5 minutes to assemble them, so they make a fantastic last-minute appetizer (as long as you have the biscuits already).
Keto Appetizers

Keto Olive Cheese Ball Eyeballs Recipe

Ingredients
- Green Olives
- Pub Cheese Spread
- Mozzarella Cheese
- Almond Flour
- Garlic Powder
- Baking Powder
- Egg
- Cream Cheese
- Salt
Directions
Preheat the oven to 350 degrees, and grease the sections of a mini muffin tin well. Place the cream cheese and mozzarella cheese into a bowl that is safe to use in the microwave. Heat for 30 second intervals until completely melted.
Add the cheese mixture to a mixing bowl with the almond flour, egg, garlic powder, baking powder and salt. Knead to combine well.
Press a bit of the mixture into the sections of a mini muffin tin to fill them. Bake for 10-15 minutes, or until lightly browned and cooked through. Let the pastries cool.
Place the pub cheese into a piping bag, and pipe it onto the top of the pastries.
Add a green olive to the center of each pastry to form an eyeball.
