What Is Olive Oil Cake 

Olive oil cake has an intuitive name. Yes, it does have olive oil in it. Traditional olive oil cake probably originated in the part of the world where olive oil is easier to source than other types of fat.

Depending on how it is made, it can either be light and spongy or as dense as a pound cake. 

My recipe is gluten-free and I didn’t use any xanthan gum, so it turned out to resemble pound cake. Surprisingly, you can’t really taste the olive oil in the cake! The bright citrus flavors from lemon zest do a wonderful job of providing lighter notes that complements the earthy olive oil.

The best thing about this cake is that after it is fully cooked, you don’t have to spend time making any glaze or icing. Just lightly dust it with some confectioner’s sugar substitute and then it is ready to serve.

Feel free to use different kinds of cake pans to make your cake. I used a springform pan because I think it was easier to remove and it didn’t stick to the sides. Make this in a bundt pan for some decorative flair! Or, make some olive oil cupcakes. The options are endless!

When you bake with almond flour, remember to use almond flour, not almond meal. The almond meal is made with almond skins in it, so your cake will have a gritty texture.

This low-carb cake will stay fresh in the refrigerator for up to 5 days. In order to keep it fresh for as long as possible, keep the air off of the cake. Seal it in a container or wrap it in food storage wrap.

Gluten-Free Olive Oil Cake 

Even though this olive oil cake is gluten-free, it still has all the same classic flavors as the traditional recipe. Some bakers like to change the citrus flavors they use.

Instead of lemon zest and lemon juice, use orange zest and orange juice. As it bakes you will smell that drool-worthy aroma!

Ingredients:

Almond flour
Baking powder
Swerve confectioners sugar substitute
Olive oil
Plain Greek yogurt
Eggs
Lemon
Fresh lemon juice
Vanilla extract

Instructions:

Preheat the oven to 350 degrees.

Add the ingredients to a mixing bowl, and beat on high until smooth.
Spread the mixture into a well greased Springform pan.
Bake for 40-45 minutes.

Allow to cool to room temperature, and then dust with more confectioners sugar substitute before serving.

  • 1/4 cup Plain Greek Yogurt
  • 4 large Eggs
  • 1 Lemon Zest and Juice
  • 1 tsp Vanilla Extract

Instructions
