I absolutely love making up new recipes with ingredients that I already have in my refrigerator. This idea came to me when I was trying to figure out how to use up some leftover ground beef and peppers. I always have eggs in stock (thank you keto!) so I decided to make a simple skillet meal.
The result was better than I imagined!
Who knew that ground beef and eggs taste so perfect together? They really do!

This meal is incredibly budget-friendly. The most expensive ingredient in it is ground beef. If you can find a type of ground meat that costs less, go for it! This skillet meal tastes just as delicious with ground chicken, ground turkey, or even some breakfast sausage.
How To Use Eggs For Dinner
Eggs are usually pretty affordable and I know that my kids love eating them at any meal they can. Frying them up in a skillet with some meat and veggies is really fun and easy too.
In fact, you can save some of this for your meal prep for the week too. It reheats so well! Just store it in your favorite resealable meal prep containers in the refrigerator. It will stay fresh for up to 3 days.

There are so many different ways you can customize this recipe. I used Monterey Jack cheese but you can try it with different types of cheese. Gouda will give it an earthier flavor, sharp cheddar cheese has a richer taste.
You can also add a small amount of habanero peppers for a powerful bite! Try it with some taco seasoning and you have a keto taco skillet.
For a meatless version, use mushrooms instead of ground beef.

Eggs
Pepper
Pepper chopped
Garlic
Monterey Jack cheese
Salt and pepper
Instructions:
1. Saute the beef in a skillet over medium high heat on the stove until browned completely. Remove and set aside.
2. Add the peppers to the same skillet and saute until they start to become tender. Remove and set aside.
3. Reduce the heat to medium, and add the minced garlic to the skillet. Saute for 30 seconds.
4. Beat together the eggs in a mixing bowl along with salt and pepper to taste.
5. Pour the eggs into the skillet with the garlic and scramble well.
6. Place the meat and peppers back into the skillet and stir to combine well with the egg.
7. Sprinkle the cheese on top, and place a lid on the skillet until the cheese has melted.
