Juicy tomatoes and herbaceous pesto combine to make a tasty keto pesto chicken pasta bake that you’ll want to make on repeat!
Pesto Chicken
This recipe gives you an entire meal in one casserole dish. There are 7 grams net carbs in each serving, so it’s really filling.
I saved you the effort of making homemade pesto (but you can certainly make your own if you want to). This cheesy pesto chicken pasta tastes like the ultimate Italian comfort food.
With tender chicken in a creamy and cheesy sauce, you’ll want to make over and over again. And you’ll feel good about it, too!
It’s a high-protein and high-fat meal with tomatoes and spinach for minerals and fiber. You really don’t have to make any sides to go with it.
Keto Pesto Chicken Bake
Pesto has a very unique flavor that enhances any dish you add it to. The garlic and basil in the olive oil is just incredible!
If you can make it homemade, then do it. I love making anything homemade if I have the time.
In fact, try to use the freshest ingredients that you can. Shred the mozzarella and parmesan cheese at home.
Use fresh raw spinach instead of frozen. You’ll notice a big different in the flavor and aroma when you do.
Pesto Chicken Pasta
What is your favorite type of keto-friendly pasta? Use it in this dish.
I used palmini linguini noodles. I love how much fiber is packed in those noodles. Plus, since they’re canned, you don’t have to cook them.
But you can use zucchini noodles instead. If you use spaghetti squash, recalculate how many net carbs are in each serving.
Spaghetti squash has quite a bit more carbs than Palmini noodles.
What To Eat With Chicken Pasta
Serve something light to the table on the side with this filling pasta bake. Make a copycat Olive Garden salad to start with and some keto green beans and bacon on the side.
Kids will love keto garlic knots! Or keep things simple and just add your favorite steamed vegetables.
Keto loaded ranch cauliflower is a really filling side dish that has a lot of similar flavors to this chicken. This Greek cauliflower rice would taste amazing with it too!
I love all the different things I mixed into the cauliflower rice.
How To Store Cooked Chicken
Save yourself time and make the chicken ahead of time. Or, use a rotisserie chicken from the store!
This recipe is perfect for your meal prep. Store it in an airtight container in the refrigerator for up to three days.
I don’t recommend trying to freeze it because the texture will change too much when you thaw it.
