Elevate your deviled egg salad with broccoli and bacon! This zesty egg salad with broccoli is a tasty way to eat more vegetables.
Broccoli Egg Salad
I just took my favorite egg salad recipe and made it even better! Small broccoli florets and crispy pieces of bacon take this from an already delicious salad to one that I look forward to making.
Plus, it’s a great way to eat more vegetables. Sometimes, I get tired of eating steamed broccoli or cauliflower rice. The zesty sauce totally transforms the flavor of the broccoli.
This is a high-protein and low-carb salad. There are just 2 grams net carbs in each serving – and this recipe makes four servings! You can use it in your meal prep or serve it at a family dinner.
Egg Salad With Veggies
I’m a huge fan of egg salad. I’ve made a ton of different varieties of it. From keto Green Goddess Egg Salad to spicy buffalo egg salad, there is something for every craving.
Want a cool cucumber flavor? Make Tzatziki egg salad. Or add some flavor and color to your plate and make beet egg salad!
This egg salad is a delicious way to both enjoy the flavor of deviled eggs and eat more vegetables. You don’t have to use just broccoli. Swap it out for cauliflower florets, diced cucumber, or diced celery.
There are so many options!
Deviled Egg Salad With Bacon
Almost everything tastes better with bacon! The bacon adds even more protein to the already high-protein salad. But it also adds a delightful crunch and some salty and savory flavors too.
Use your favorite kind of bacon – as long as it doesn’t have added sweeteners (like maple syrup). It will taste delicious with both turkey or pork bacon.
What To Eat With Salad
This is the perfect thing to eat for lunch. Serve it with another salad. Low-carb pea salad is creamy and zesty and tastes great with the eggs.
You could also make some keto crunchwraps for lunch and have the deviled egg salad on the side. And you can’t go wrong with low-carb ham and cabbage salad on the side,
If you’re going to munch on the salad as a snack, then make some low-carb antipasto bites with it. They also taste perfect with some tomato basil cream cheese pinwheels.
If you’re going to serve this salad for dinner, then make low-carb cornish hens with it or air fryer alfredo chicken wings.
How To Store Salad
You can save yourself a lot of time by hard boiling all of your eggs ahead of time. Store hardboiled eggs in an airtight food storage container in the refrigerator for up to a week.
Store the leftover salad in an airtight container in the refrigerator for up to three days.
Do not freeze this salad. It will change the texture and – trust me – it won’t be as appetizing. It tastes so much better when you serve it fresh.
