Make low-carb antipasto bites for your next party, eat them for lunch, or munch on them when you get hungry between meals. They are perfectly delicious and satisfying!
Meat and Cheese Bites
Even though it sounds like someone who doesn’t like pasta, (anti, pasta) antipasto is an Italian word that literally means before the meal. Most Italian appetizers that include cured meat and cheese will be called antipasto.
These little meat and cheese bites are smaller versions of my longer antipasto skewers. My skewers recipe uses pepperoncini peppers and tomatoes. These meat and cheese bites actually use toothpicks and dill pickles (and no tomatoes).
Low-Carb Appetizer
You’ll create tiny little appetizers when you arrange the meat, cheese, pickles, and olives on toothpicks. They are bite-sized little snacks that are easy to grab and munch on.
Serve them with some ,keto crackers, keto tomato cream cheese pinwheels and chicken yakitori skewers. Or keep going with the skewers theme and add some steak and shrimp kabobs to the table too.
Antipasto Bites
If you don’t want to spend time sticking them on toothpicks, mix the ingredients with your favorite types of lettuce and eat it like a salad. Add some chopped tomatoes and drizzle it with your favorite vinaigrette dressing.
My recipe will make 30 little antipasto bites if you use toothpicks. You could also use longer skewers. You’ll either have to buy more meat and cheese or make fewer skewers.
Meat and Cheese Snacks
Snacking is an important part of the keto diet. When you’re hungry, eat something that is high-protein and high-fat. It will keep you full until your next meal without compromising your macros.
Cheese and cured meats are exactly the perfect things to snack on. They will help you feel full and build lean muscle, which increases your metabolism.
Since these antipasto bites are high in protein, they are also the perfect things to eat after a hard workout.
Keto Party Appetizers
If you’re going to serve these antipasto bites to guests at a party, serve them on a decorative serving tray or cover a florist foam block with fabric and stick the toothpicks into the foam block.
You can make these little appetizers up to three days in advance. Store them in an airtight food storage container. Keep the air off of them so that the mozzarella cheese doesn’t dry out.
The olives are optional, but they add lovely color the bites! Add a small piece of fresh basil for even more color.
