A low-carb pea salad is a perfect dish to take to parties, potlucks, and family dinners. It’s creamy and tastes delicious when it’s chilled!
Creamy Pea Salad
Salads don’t always have to be chopped lettuce and vinaigrette dressings. The best way to stay dedicated to your keto diet is to enjoy the food you eat.
The creamy pea salad is covered in a creamy mayo dressing with crispy bacon and bold red onion. The small green peas are the best thing about this salad. The textures are so different from lettuce that you’ll look forward to how it tastes and feels to eat it.
Creamy Bacon Pea Salad
Bacon seems to make everything better, doesn’t it? It tastes great with pork and cabbage, on top of oopsie bread, and even better, wrapped around chicken and smothered in cheese sauce.
You can use either turkey or pork bacon in this salad. Just make sure that the bacon you use is sugar-free.
I crumbled about 6 strips of bacon into this salad. You can definitely add more if you like the taste and texture of the bacon.
Low-Carb Pea Salad
This is a basic pea and bacon salad and there are a bunch of different ways to change it up. Add some chopped hard-boiled eggs for more protein. Or, add some shredded or canned chicken to the salad.
I used a combination of cheddar and mozzarella cheese, but you can change that, too. Give it some heat with pepper jack cheese or some smoky notes with gouda.
Cold Pea Salad
This is the perfect salad to make ahead and use in your meal prep. In fact, it tastes better when you keep it in the refrigerator for at least a day or so.
Store the pea salad in an airtight container in the refrigerator for up to three days. If you plan on using it in your meal prep, I suggest using fewer red onion pieces. They are extremely strong and taste even bolder the longer you keep it refrigerated.
Pea Salad Dressing
This is a simple salad dressing with mayo, salt, and pepper. You can change it up a few ways if you want.
Make it taste sweeter. Sprinkle some granulated sweetener into the mayonnaise. Combine it with some chopped avocado for an earthier, sweeter flavor. You could even make it spicier by sprinkling some hot sauce into the mayo.
You can also add some spices. Try it with a tablespoon of everything bagel seasoning or some garlic powder.
