This keto chicken poppyseed casserole is a creamy, savory, and aromatic recipe that is the perfect thing to make for family dinner.
Chicken Poppyseed Casserole
Have you ever used poppy seeds in your cooking? You might have seen these little black seeds inside muffins or on top of rolls, but I believe they taste the best when you use them on top of a creamy chicken casserole.
Poppy seeds add a nutty and earthy contrast to the slightly-sweet parmesan and cream sauce. They bring out the natural earthiness of the broccoli too. It’s the perfect seeds to sprinkle on top.
Keto Chicken Casserole
I love making chicken casseroles for my family for dinner. They are an entire meal in one dish. This recipe has chicken and broccoli in a creamy sauce. It’s filling and delicious – and you don’t need much else on the side.
This recipe has a few more steps to it. It isn’t exactly a one-dish meal. First, you have to blend the cream cheese, chicken broth, and heavy whipping cream together. I used a food processor, but you can use any type of blender that you have – including an immersion blender.
Then, you will simmer this mixture in a saucepan until it is completely melted and smooth. Even though there are a few extra steps, this is still a pretty simple recipe that anyone can make.
Keto Chicken Bake
This keto chicken bake is also the perfect thing to serve at a large family dinner. No one will even be able to tell it is a keto-friendly meal. It’s fantastic because almost anyone can enjoy it – no matter which food sensitivities they have.
If you need to make it dairy free, I would use goat cheese instead of cream cheese. It has a rich and creamy texture that is very much like cream cheese. Then just leave out the parmesan cheese and use coconut cream instead of heavy whipping cream.
And ghee is a dairy-free alternative to butter. A dairy-free version is possible, but it will definitely change the taste a bit.
Best Sides For Chicken
I added broccoli to the chicken casserole so you won’t need very many sides to make it a complete meal. This would also taste amazing served over cauliflower mash.
I also think that some keto rosemary dinner rolls would be perfect with this chicken. They have a similar flavor profile and you can use the rolls to dip into the creamy sauce.
Or make your favorite asparagus recipe to serve on the side. It is slightly sweet and pairs perfectly with the chicken.
Can You Freeze Chicken Casserole
Yes, you can freeze chicken casserole. In fact, this recipe is fantastically easy to freeze and make ahead. Just prepare it and follow the directions all the way to the end, before you bake it.
Then, place it in a freezer-friendly baking dish. Seal the chicken casserole completely and wrap it in aluminum foil or plastic wrap. It will stay fresh in the freezer for up to six months.
