This shredded chicken comes is so tasty that you’ll never go back to unflavored shredded chicken again! The best part is that there are only five simple ingredients in it.
You could also call this recipe slow cooker southwest chicken because it infuses Mexican and midwest flavors into one amazing dish. Who knew that ranch seasoning and taco seasoning go so well together?
The salsa and cream cheese remind me of my favorite queso. It’s both creamy and slightly spicy at the same time. Use the spiciest level of salsa that you can handle. It really elevates the overall flavor of this incredible shredded chicken.
Slow Cooker Shredded Taco Chicken
When you use taco seasoning, always read the ingredients label. Make sure you are using a taco seasoning that doesn’t have added carbs in it. You could make your own, but I like buying packets of taco seasoning because it is just so much easier.
This is a pretty mild recipe, so if you want it to be a lot spicier, I suggest adding a few chopped jalapenos or poblano peppers. That will smell amazing as it cooks all day.
Keto Chicken Taco
You can use either fresh or frozen chicken breasts for this recipe. Just understands that if you place frozen chicken breasts in the slow cooker, it will release a bit of water that used to be ice, which will thin the sauce a bit.
Either chicken breasts or boneless skinless chicken thighs will taste perfect in this recipe. Chicken breasts shred better, so I prefer to use them when I need shredded chicken.
Ranch Chicken Tacos Slow Cooker
When you make this recipe in your slow cooker, I suggest using a slow cooker liner. As the chicken and cheese cook all day, it might stick to the inside of your Crock Pot. Liners make clean-up so much faster – you’ll be glad you used it!
Also, make sure you look at the ingredients list on whatever salsa you buy. Most of the time, salsa is just made from tomatoes and peppers, but there are some varieties that include added sugar or fruit juice.
Shredded Chicken Ideas
After it is fully cooked, you’ll notice how easily this chicken shreds. It will practically fall apart! There are a lot of different ways you can serve this shredded chicken. I’ll share my favorites.
Add it on top of some cauliflower rice. This is a simple idea and it is a complete meal in one dish.
You could also place the shredded chicken inside your favorite low-carb tortillas. Then eat it just like a regular taco. Or use this recipe for keto chili lime tortilla chips and add the chicken on top for homemade nachos!
Finally, make a southwest chicken pasta dinner. Add the shredded keto ranch taco chicken on top of your favorite type of keto-friendly pasta. Mix it together and you have a delicious dinner!
