Keto Strawberry Bars
If you enjoy strawberries, then you will love these keto strawberry bars! They are a fresh and sweet twist to classic brownies. Instead of chocolate, I used almond flour and butter. The addition of strawberries and lemon juice is a fruity surprise that is perfect with the rest of the ingredients.
You can use either fresh or frozen strawberry slices, but I prefer using fresh. You can definitely tell a difference in the texture if you try to cook the frozen strawberries. Plus, I prefer to slice the strawberries really thin.
These keto strawberry blondies taste amazing with a keto strawberry cheesecake smoothie. Enjoy them together for a quick lunch.
Keto Lemon Blondies
Trust me, and juice a fresh lemon. You will notice a huge difference between fresh lemon juice and jarred juice. Then, add some fresh lemon zest on top as a garnish.
If you have extra lemons in your kitchen, then use them to make some keto lemon bars. They will taste perfect with these strawberry lemon blondies at your next birthday party or outdoor BBQ.
These lemon blondies are high in protein so you can eat one or two of them for breakfast with some keto lemon ricotta toast. It’s a refreshing way to start your day.
Strawberry Lemon Blondies
The combination of strawberries and lemon is an iconic pair. It reminds me of my favorite drink as a child – strawberry lemonade. You could call these strawberry lemonade blondies or strawberry lemonade bars. My kids call them their favorite dessert bars!
These are the perfect things to serve when you have a large group to feed because they are safe for people with food sensitivities. They are gluten-free. If you need to make them dairy-free, just use ghee or coconut oil instead of butter.
Keto Blondies
These keto blondies taste so delicious that they will disappear within a few hours of baking them. If you happen to have any leftovers, then store them in an airtight container or wrap them in plastic wrap and keep them in the refrigerator for up to five days.
You can also freeze keto blondies to make them last even longer. They will stay fresh in the freezer for up to 6 months.
Almond Flour Blondies
To make these almond flour blondies taste the best, I suggest using blanched almond flour, not almond meal. Even though almond meal is sold next to almond flour, it has a grainy texture, and that graininess can be distracting in these blondies.
Can you use coconut flour instead of almond flour? Unfortunately, they are not a simple 1:1 replacement. Coconut flour absorbs more liquid than almond flour, so these blondies will come out way too dry if you try to substitute with coconut flour.
