This is probably the best way to cook green beans because they always turn out with the perfect amount of tenderness and crispiness. They are topped with a lemon and mustard sauce, some nutty almonds, and tangy feta cheese.
I’ve made other green bean recipes before – mostly with meat. But this recipe is made without any meat at all! So, it’s basically the perfect low-carb veggie side dish.
Serve it at a family dinner, holiday dinner, or take it to a potluck. The bright red onions and soft feta cheese look absolutely stunning on top of the steamed green beans.
Everyone will want to dig into it – they won’t even know it’s a low-carb recipe.
Green Beans and Almonds
Green beans have an earthy sweetness that goes really well with savory ingredients like nuts and ham. The saltiness of the nuts and ham also brings out the natural sweetness in the green beans.
If you don’t like almonds, just leave them out. Not using them won’t affect the taste of this delicious warn green bean salad.
There are a few other ways you can change this recipe, too. If you want to make the red onions milder, then rinse them in water first.
To make the salad a bit spicier, use spicy brown mustard instead of dijon mustard. And if you need this recipe to be dairy-free, use crumbled goat cheese instead of feta cheese.
Keto Green Bean Salad
One of the best things about this salad is that it’s made with all whole and fresh ingredients, so don’t take shortcuts. Use fresh green beans, not frozen or canned.
Use real garlic, not jarred garlic or garlic powder and definitely use fresh lemon juice from a real lemon. The bottled lemon juice isn’t as tart or flavorful.
You can also add meat to the salad and elevate it from a side dish to the main course. I would add either turkey, ham or bacon to the salad.
These three types of meat will mix with the ingredients in the warm salad the best.

Directions
Place the green beans and water in a skillet over medium heat. Cover and simmer until the green beans are a crisp tender.
