This high-protein cottage cheese salad only has 5 grams net carbs in each serving. It’s a refreshing and nutritious lunch on the keto diet.

What Is Cottage Cheese Salad 

A cottage cheese salad is a cold salad with tomatoes, cucumbers, onion, and fresh herbs all smothered in tangy cottage cheese. If you love creamy salad dressings, then you’ll fall in love with this easy salad!

Low Carb Cottage Cheese Salad

You literally just mix everything together and eat it. It doesn’t get easier than this. And there are a bunch of different ways to change it, too!

Use your favorite type of raw veggies. Instead of cucumbers and tomatoes, make it with broccoli and cauliflower or tomatoes and celery.

You can even replace the cucumbers with pickles! (If you choose to use pickles, I suggest leaving out the fresh dill). 

Keto Cottage Cheese Salad

Cottage cheese is high in protein and nutrients like calcium. It’s the perfect thing to use as the base for this filling and easy tomato cucumber salad.

One quick note: if you’re sensitive to the aroma and taste of raw onions, I suggest cutting back to 1/8 of a cup of diced onions. You can even leave them out or replace them with milder green onions. 

I used Roma tomatoes because they are meatier and don’t have as much juice in them. This means the salad won’t get watered down.

If you want to use any other type of tomatoes, I suggest dicing them and removing any juice before mixing them into the salad. 

Best Herbs For Cottage Cheese 

If you love cilantro, feel free to use it instead of fresh parsley! Trust me, when you make this salad, use fresh herbs.

Not only do they look better, but they have a much better taste and texture, too. Feel free to experiment and use your favorite herbs!

Instead of chopped fresh dill, add chopped fresh basil. It will change the taste, but it will still taste delicious. 

What To Eat With Salad 

This salad is lighter since it doesn’t include any meat in it. I love eating soup with my salad, so serve cottage cheese salad with a hearty soup.

Creamy keto ham and veggie soup is light but hearty, so it tastes perfect with your creamy salad. Low-carb shepherd’s pie soup is another fantastic choice because it’s filled with meat and veggies in a savory broth.

How to Store Salad

Since this salad is so easy to mix together, I suggest storing cottage cheese separately from the rest of the ingredients. To save yourself time, you can pre-mix the cucumbers, tomatoes and other ingredients.

Then, store them in an airtight container in the refrigerator for up to three days. If you try to store the cottage cheese salad after you mix everything together, the cucumbers will soak up the cottage cheese and the onions will become more aromatic.

  • Cottage Cheese
  • Roma Tomato 
  • Cucumbers 
  • Red Onion

Directions 

Chopped Parsley

Mix together all of the ingredients in a large bowl until well combined.
