On the keto diet, cottage cheese is often overlooked. Sure, we love Greek yogurt and recipes with cream cheese, but cottage cheese is a delicious and versatile food too!
There are so many different ways you can snack on it and cook with it. Since I’m not the biggest fan of the curds in cottage cheese (or the tart taste it has), I love this recipe.
Creamed cottage cheese and honey taste better than yogurt! It’s sweet and rich and is the perfect thing to eat with keto granola.
Keto Honey
The secret to sweetening cottage cheese is to use sugar-free honey substitute. While liquid sweetener drops could also work, the caramelized flavor from the honey substitute is unmatched.
Plus, the thick and sticky texture of the honey is perfect with the creamy cottage cheese! I don’t recommend trying to use granulated or brown sugar substitute. Sugar-free honey is the best sweetener for this keto dessert.
Creamed Cottage Cheese
How do you get cottage cheese creamy? The best way to cream cottage cheese is with a food processor. It takes just a few minutes and makes it extra smooth.
I didn’t try this with a blender, but that sounds like it could also work. Keep pureeing and processing it until it is as smooth and creamy as you like it.
How do you store creamed cottage cheese? Keep it in an airtight container in the refrigerator for up to a week. Do not store it with the granola. I like to reuse the plastic cottage cheese containers, they work perfectly.
Sweet Cottage Cheese
You can eat the sweetened cottage cheese just like it is, but adding some keto granola takes it to the next level! The amount of carbs in this dessert will change depending on what kind of keto granola you use.
I like to add just a few tablespoons of keto granola in each cup. If you don’t have low-carb granola, use my low-carb granola bars recipe. Then, break the bars up into small pieces and sprinkle them on the creamed cottage cheese.
