This simple recipe makes about 12 squares, and so when I calculated the macros, I decided one serving would be two squares. Since it makes so much, you might have leftovers. That’s ok!

Just store the leftovers in an airtight food storage container in the refrigerator for up to three days. You can also freeze the egg bake, too.
Keep it in a freezer safe container and remove as much air as possible. Keep it in the freezer for up to six months.

- Olive Oil
- Onion

Directions

1. Heat the olive oil in a skillet over medium high heat.
2.Add the onions and peppers to the skillet, and saute for 4 minutes.

3. Mix in the mushrooms, and saute another 3 minutes.

4. Stir in the garlic and Italian seasoning, and saute for 30 seconds longer.

5. Whisk together the cottage cheese and eggs in a bowl.

6. Mix in the cheese, vegetable mixture, bacon and salt and pepper to taste.

7. Pour the mixture into a well greased 9×13 baking dish.

8. Bake for 35 minutes, or until cooked through.
