Stuffed Cucumber
Just when you think you’ve thought of all the different ways to eat cucumber, this one comes along and surprises you! I’ve made stuffed cabbage rolls, stuffed peppers, and even stuffed mushrooms, but stuffed cucumbers are one of my favorites.
Usually, when you stuff a vegetable, you bake it. But with stuffed cucumber, you serve it cold. It’s a refreshing and fun new way to serve and enjoy chicken salad.
Cranberry Pecan Chicken Salad
This is a sweet and salty chicken salad that basically satisfies any craving you have. The high fat and protein content will fill you up and leave you feeling satiated.
Leave out the pecans if you are allergic to tree nuts. This salad will taste just fine without them.
I made keto cranberry salad before. In the previous recipe, I used both mayo and sour cream. I also added some almonds. The two recipes are very similar but try the first one.
If you like it, then use it instead of the one I shared. You can stuff the cucumbers with any type of chicken salad that you like!
Keto Chicken Salad
This is a very affordable lunch, especially when you use canned chicken. For something fresher, buy a rotisserie chicken at the grocery store. You can even use leftover roasted chicken that is sitting in the fridge.
Change it up! Use tuna fish instead of chicken. It will still be extra delicious.
Cucumber Boats Keto
This is a fun new way to eat chicken salad without utensils. It’s great when you pack a lunch. Plus, kids love to assemble their own cucumber boats.
People say that when kids help cook, they are more likely to eat what they cook, so bring them into the kitchen!
This is kind of the same idea as when I made keto dill pickle boats. Not everyone loves the sour taste of pickles, so this is milder, and more appealing. I also filled the cucumbers with a different kind of chicken salad.

All of the ingredients play so well together. I love how the crunchy pecans and chewy dried cranberries fit in with the tender chicken and creamy dressing. This is a fun meal to eat, especially if you are a fan of a variety of different food textures.
It’s best to use mini cucumbers when you make the boats. They will be a lot easier to hold in your hand as you eat them.

Ingredients:
Mini cucumbers
Large can of chicken drained well
Dijon mustard
Mayonnaise divided
Lemon juice divided
Chopped pecans
Sugar free organic dried cranberries
Chopped green onions
Chopped celery
Salt and pepper
Instructions:
Slice the cucumbers in half lengthwise, and use a spoon to scoop out the flesh from the center.
In a bowl, combine the canned chicken, dijon mustard, ¼ cup of the mayonnaise, 1 tsp of the lemon juice, pecans, cranberries, green onions, celery and salt and pepper to taste. Stir to combine well.
Fill the cucumbers with the chicken salad mixture.
In a bowl, mix together the remaining mayonnaise and lemon juice until smooth.
Drizzle the mayonnaise mixture over the filled cucumbers and serve.

- 6 mini Cucumbers
- 1 large Can of Chicken drained well
- 2 tsp Dijon Mustard
- 1/2 cup Mayonnaise dived into two 1/4-cup servings
- 3 tsp Lemon Juice divided
- 1/2 cup Chopped Pecans
- 1/4 cup Sugar-Free Dried Cranberries
- 1/4 cup Chopped Green Onions
- 1/4 cup Chopped Celery
Instructions
