These gorgeous little keto raspberry cake bars are made with a sugar-free jam – they are perfect for parties or just to enjoy yourself.
Are Raspberries Keto
Yes, raspberries are a fantastic fruit to eat while you are on a low-carb or ketogenic diet. One cup of fresh raspberries only has 7 grams of net carbs.
They are a wonderful source of fiber, with 8 grams of fiber in each cup.
This type of fruit is also full of vitamin C and disease-preventing antioxidants. If you are looking for a delicious way to eat more fruit, then these tasty cake bars are a perfect idea.
Best Fruit For Keto
When it comes to the keto diet, just because it is fruit doesn’t mean it will fit in with your daily macros. Some types of fruit have substantially more carbs and natural sugar than others.
These are the best types of fruit you can eat on a keto diet and the number of carbs in 1/2 cup serving:
- Blackberries – 3 grams net carbs
- Raspberries – 4 grams net carbs
- Strawberries – 9 grams net carbs
- Watermelon – 12 grams net carbs
- Lemon Juice – 3 grams net carbs
Keto Raspberry Cake
One of my favorite things about these gluten-free cake bars is that you can make them ahead of time and store them in the refrigerator. Just make sure you keep them in an airtight container. They will stay fresh for up to five days.
When you are ready to enjoy them again, just place them in the oven at a low temperature until the bars are completely heated through.
Sugar-Free Raspberry Jam
I made the swirls in this cake with sugar-free raspberry jam. When you buy raspberry jam from the store, pay very close attention to the sugar or carbs amount on the nutrition label. The lower this number, the better.
You can also really easily make your own jam. You need some frozen raspberries, Swerve sweetener, water, and chia seeds. All Day I Dream About Food has a fantastic recipe for it. Then you can use this jam on some keto French toast, on top of a low-carb mug cake, or inside keto raspberry thumbprint cookies.
Almond Flour Cake
To make the cake bars, I used almond flour. Remember to use almond flour, not almond meal. If you use almond meal, the cake bars will have a gritty texture.
These are the perfect treats to serve at a birthday party, tea party, or brunch. They taste delightful with a slice of keto olive oil cake with them too.
