Beans are a common cause of inflammation in people. They are not allowed on Whole30 because they are difficult for our digestive enzymes to break down and extract nutritional value from.
Plus, beans also have phytates – which are anti-nutrients that make healthy minerals like zinc and iron unavailable to our bodies.
This chili is even better for you without the beans. Eat a spoonful of it and you won’t even miss them.
How To Make It In The Slow Cooker
If you don’t have an Instant Pot, get one! Seriously, I love my Instant Pot. It speeds up meal prep and saves me so much time in the kitchen.
This meal can easily be made in your slow cooker too if you want to set it and forget it.
Just brown the ground beef first and drain the grease. Then, add all the ingredients to the slow cooker and set it to low. Cook it on low for 4-6 hours. It will be ready for dinner when you are!
Low-Carb Chili Recipe
Since it doesn’t have beans or sugar, it’s naturally low in carbs. This is the best chili recipe you will ever make – and you won’t even miss the sugar!
It reheats well for meal prep. Make a big batch of it and store it in a sealed container in your refrigerator. It will stay fresh in the fridge for up to 5 days.
Another fantastic thing about this recipe is that it’s made in the Instant Pot. It only takes 35 minutes from start to finish to make enough food for lunches all week long!
How To Customize Keto Instant Pot Chili
There are lots of ways you can change this up and make it taste just like you want it to taste.
Use different meats. Instead of ground beef, use ground chicken, turkey, or even pork sausage.

Keto/Paleo/Whole 30 Instant Pot Chili
Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes

Ingredients
Olive oil
Onion
Red pepper
Celery
Garlic
Grass-fed lean ground beef
Chili powder
Smoked paprika
Cayenne pepper
Fire-roasted diced tomatoes
Tomatoes
Beef broth
Tomato paste
Sea salt
Bay leaves
Parsley
Instructions
Pour 1 Tbsp of oil into the Instant Pot and turn to saute mode. Add the onion, pepper, celery, and garlic and sauté until they begin to soften about 3 to 4 minutes.
Add the remaining oil and lean ground beef. Cook until it begins to turn brown, about 3-4 minutes. Drain any excess fat.
Add the seasonings and cook until the beef is browned and crumbled, about 3-4 additional minutes.
Add the remaining ingredients to the pot, and mix until well combined. Cover with the Instant Pot lid and turn the knob to sealing. Set to cook on manual mode at high pressure for 10 minutes.
After it’s finished cooking, allow the steam to release naturally. (Until the pin drops down to indicate its fully released).
Remove the lid and turn on the saute feature. Cook for another 3-4 minutes, stirring constantly to prevent burning until the chili thickens up a bit.
Add in the chopped parsley and serve warm.

- 1/2 cup Onion, diced
- 1 Red pepper, diced
- 1/2 cup celery sliced
- 1 Clove of garlic, minced
- 1 lb Grass-fed lean ground beef
- 1 tbsp Chili powder
- 1 tbsp Smoked paprika
- 1/4 tsp Cayenne pepper
- 1 14oz Can fire-roasted diced tomatoes
- 1 14 oz Can crushed tomatoes
- 1/2 cup beef broth
- Pinch of Sea salt
- 2 Bay leaves
- 1/2 cup Parsley, chopped (save for the end)
Instructions
