~ Eggo’s On The Go ~

While I was growing up my mom would wake up and make us a big, hearty breakfast of fried salami, eggs over-easy and toast con fresh cafe con leche to go. It wasn’t the healthiest way to start your day, but it was delicious! Now as a mom I, of course, also want my kids to have a big breakfast, but as a working mom, it’s not always realistic for me to pull out all the stops so I rely on my creativity and Eggo Waffles !
Most mornings I get up and hit the ground running. I grab some cafe, check emails, change diapers, make sure everyone has their homework, and then desperatey try to get everyone to eat a quick bowl of cereal, but cereal is just not enough anymore and going through a drive-through is just too expensive and sometimes takes too long. On those days, I make them Eggo’s On the Go. It’s a yummy sandwich that I usually bake on Sundays. It’s made of eggs, ham, cheese and, of course, Eggo waffles that are frozen in a ziplock bag and nuked in the microwave. They’re perfect to grab on the way out the door and can easily be eaten in the car. My kids love them so much that sometimes they ask for one after school, which is fine by me!

I always grab a box of buttermilk Eggo waffles during my weekly Target run. I also buy a new batch of eggs, ham, and cheese. The great thing about the Eggo On the Go sandwich is that you can make a different sandwich just as easily! You can swap out the ham with bacon or you can even skip the eggs and add some fried salami con queso! YUM!! Below are the easy step by step instructions to make your very own Eggo On the Go!

Eggo’s On The Go
What you’ll Need:
Buttermilk Eggo Waffles
Spray butter & Eggs
Ham
Cheese
Sandwich bags
How To:
Preheat oven to 350
Grab a muffin pan and spray it with spray butter.

Bake eggs for 30 minutes

Lightly toast your Eggo waffles and place ham, cheese, eggs and other waffle on top.

Place in sandwich bag and freeze.

When you’re ready to eat your sandwich just pop it in to the micorwave for 60 seconds and you’re good to go!
