Cracker Barrel is known for serving classic southern recipes that are basically comfort food. They’re also filled with sugar and carbs, too. Yes, even their meatloaf isn’t safe on a keto diet.
But it tastes so good that I knew I needed to make a copycat version. And just like the iconic Cracker Barrel Meatloaf, I topped mine with a tangy and sweet tomato glaze.
Making copycat recipes is always the right answer. It saves you so much money over eating out.
Plus, you can control exactly how it tastes and what’s in it. Keep reading and I’ll share some easy ingredient swaps you can make so this meatloaf has the flavor and texture you love.
Keto Crack Barrel Meatloaf
If you struggle to get your kids (or even yourself, let’s be honest) to eat more veggies, make this meatloaf! It’s filled with green bell pepper pieces that cook so well into it you can’t tell they’re in it.

This is a wonderful source of protein, too. In addition to the ground beef, it has eggs, almond milk, Quest cheese crackers, and shredded cheddar cheese.
What are some more ingredient swaps you can make in this keto Cracker Barrel meatloaf? You could mix half ground beef with half ground pork for a bit more flavor.
And if you don’t like how it tastes with the green bell peppers, leave them out. Or replace them with jalapenos for a bit of heat. You could use dairy milk or coconut milk instead of almond milk.
Copycat Meatloaf
There are only 3 grams net carbs in each slice. That’s so low that you can eat a few different sides with it.

How about going with more comfort food? Make cauliflower mashed potatoes and bacon wrapped asparagus, or a side salad! Serve this low carb meatloaf on this cloud bread or cut your meatloaf into slices, top with cheese and crumbled bacon and turn it into a casserole!

Meatloaf Without Breadcrumbs
Instead of breadcrumbs, I crumbled up Quest cheese crackers. They have the perfect texture and add cheesy flavor to the meatloaf at the same time.

But you have other options, too. Try it with crushed pork rind crumbs. Or let some keto bread slices get stale and crumble them into bread crumbs.
This is the perfect thing to make ahead or add to your weekly meal prep, too. To freeze your meatloaf, cook it first, let it cool, and then wrap it in aluminum foil.
Afterward, you can place it in a sealed plastic bag. It will stay fresh in the freezer for up to six months.
I also use this to vacuum food sealer to save more room, and cut meatloaf into slices before I store it in the fridge or freeze it.
Easy Keto Meatloaf
You can also keep your meatloaf in the refrigerator, too. Store it in an airtight container and keep it refrigerated for up to five days.

To reheat your meatloaf spray slices of meatloaf with cooking spray and place in the air Fryer for 10 minutes and flip halfway.

- Ground beef
- Green bell pepper finely chopped
- Onion finely chopped
- Large eggs
- Almond milk
- Packages of Quest cheese crackers crushed into crumbs
- Shredded cheddar cheese
- Sugar free ketchup
- Swerve brown sugar substitute
- Worcestershire sauce
- Dijon mustard
- Salt and pepper to taste
Instructions:
Preheat the oven to 350 degrees.
Place the ground beef, onion, green bell pepper, eggs, almond milk, crushed cracker crumbs, cheese and salt and pepper to taste into a large mixing bowl, and knead to combine well.

Form the meat mixture into a loaf shape in the center of a well greased 9×13 baking dish.

Bake for 30 minutes.

Stir together the sugar free ketchup, Swerve, worcestershire sauce and dijon in a small bowl until well combined.

Brush the sauce on the meatloaf, and return to the oven for another 20-30 minutes, or until cooked through.
