Are you a huge fan of lemonade? If so, then you are really going to enjoy these cookies! The crispy gluten-free almond flour cookies are flavored with lemon juice and lemon zest, and then I added more lemon juice and lemon zest in the cream cheese filling.
These are like a lighter version of Oreo cookies! They are so much fun to pack in a picnic or serve to kids at a birthday party. You won’t believe it, but there are just 2 grams net carbs in each sandwich cookie! Yup, you can feel free to indulge in more than one.
Lemon Sandwich Cookies
These sandwich cookies are a lot of fun for kids to make – and they are even more fun to eat! If your kids love to make cookies, then let them join you in the kitchen for this recipe. Kids can help cut out the cookies with the cookie cutter and then use a piping bag to add the filling.
Older kids can learn how to use a rolling pin to roll out the dough evenly. It’s a very sticky dough, so I suggest rolling the dough out in between two pieces of parchment paper.

This is a fun recipe to change up. If you make any changes to the recipe, please let me know in the comments. One way you can change them is to spread some keto-friendly ice cream in the middle.

How To Freeze Cookie Dough
If you want to make the dough and freeze it for later, here’s how to do just that.
First, follow the recipe and chill the dough first. Chilling it first makes it easier to handle. Then, roll the cookie dough into balls and place them in a single layer on a baking sheet.
Put the baking sheet in the freezer for one hour. Once your cookie dough is frozen solid, place them into a labeled zipped-top freezer bag.
Freeze the cookie dough for up to three months.
When you are ready to bake the cookies, remove them from the freezer and place them on your prepared baking sheet. Follow my recipe and bake them until they are golden brown.

Instructions:
Mix together all of the ingredients for the cookies until smooth.
Chill the dough for 1 hour.
Roll the chilled dough to about ¼ of an inch thick in between two pieces of parchment paper.
Use a small circle cookie cutter to cut out circles of dough.
Place the circles of dough on a parchment lined baking sheet.
Bake the cookies in a 350 degree oven for 10-15 minutes until lightly browned. Cool to room temperature.
Mix together the ingredients for the filling.
Spread the filling on the cooled cookies, and top with another cookie to form a sandwich.
