Keto Bacon-Wrapped Chicken Thighs With Cheddar Sauce
Why does it seem like coming up with a main entree for dinner seem like a chore? Tacos? Done it. Soup and Salad? Boring. Well, this recipe will impress everyone – even picky-eating kiddos. Crispy bacon wrapped around juicy chicken thighs, with a creamy cheddar cheese sauce on the side.
It’s as fancy as a restaurant item but as easy as chicken fingers. This is basically a parent’s dream come true. It’s something you’ll enjoy eating that fits in with your macros in the ketogenic diet, and something your kids will enjoy eating with you.
These chicken thighs are the perfect things for your meal prep. Store them in an airtight food storage container in the refrigerator for a week. Remember to store the cheese sauce in a separate container.
Keto Bacon-Wrapped Chicken
To make this incredible bacon-wrapped chicken, I used boneless and skinless chicken thighs. You can certainly use bone-in and skin-on chicken thighs too. I suggest removing the skin first, but you can leave the thighs the way they are. They will just take longer to cook.
Use an instant read food thermometer to monitor the internal temperature of the chicken. Chicken should be cooked until it reaches an internal temperature of 165F.
You can also make this recipe with chicken breasts, but I don’t recommend it. When you back the chicken breasts, they run the risk of drying out too much. Chicken thighs retain more juices and aren’t as dry.
Keto Cheese Sauce
This is all cooked in a basic (but delicious) cheese sauce. To make the sauce you’ll need some chicken broth, heavy whipping cream, and shredded cheddar cheese. It’s always best to shred cheese at home instead of buying pre-shredded cheese.
The pre-shredded cheese has added ingredients in it to prevent caking.
Use your favorite kind of chicken broth or stock. You could even use vegetable broth instead of chicken broth.
Best Keto Bacon
Whenever you eat bacon on the ketogenic diet, read the labels. Do not use any kind of bacon that has added sugar or maple syrup. Uncured bacon is the best for you.
You could use turkey bacon, but you will need to use toothpicks to keep the turkey bacon attached to the chicken. It acts differently than pork bacon when you try to use it in bacon-wrapped recipes.
What To Serve With Baked Chicken
Since this chicken has a creamy cheese sauce with it, I suggest adding some veggies and other sides that you can cover in the cheese sauce too.
Steam some cauliflower and broccoli florets and then drizzle the cheese sauce on top. Or, make some fluffy mashed cauliflower on the side. Keto cauliflower stuffing would taste amazing with this chicken too.
You can also make almond flour dinner rolls that are low in carbs. I love dipping the rolls into the cheese sauce.

Ingredients:
Boneless Skinless chicken thighs
Bacon
Paprika
Garlic powder
Salt and pepper
Olive oil
Butter
Minced garlic
Chicken broth
Heavy whipping cream
Shredded cheddar cheese
Instructions:
Preheat the oven to 400 degrees.
Add the oil to an oven-proof skillet over medium high heat on the stovetop.
Season the chicken with the garlic powder, paprika and salt and pepper to taste, and then wrap each piece of chicken in two pieces of bacon.
Place the chicken into the heated skillet, with the bacon seams pointing down. Saute for 2-3 minutes each side.
Transfer the skillet to the oven, and bake for 20 minutes.
Turn the broiler on high, and broil for a few minutes until the bacon is crispy.
Remove the chicken from the skillet, and drain the extra oil and grease out.
Return the skillet to the stovetop over medium heat. Add the butter and garlic, and saute for 1 minutes.
Stir in the chicken broth and heavy whipping cream, as well as salt and pepper to taste.
Simmer until thickened.
Mix in the cheese until completely melted.
Return the chicken to the skillet, top with cheese sauce and serve.
