Keto Cheeseburger Soup
I love recreating new low-carb ways to eat classic recipes, and few things are as classic as a good ‘ol burger! Sure, you can always enjoy a bunless burger, but I love deconstructing the ingredients and putting them together in creative ways.
This keto burger bowl is really popular because it is so filling and delicious!
For this recipe, I took all the common cheeseburger ingredients and put them in a creamy and filling soup. The broth is spiced with tomato paste, mustard powder, and Worcestershire sauce.
Keto Bacon Cheeseburger Soup
There are a lot of different ways you can change this recipe to make it taste how you want it to. If you want it to be spicier, add some hot sauce and jalapeno peppers. Change the cheddar cheese to pepper jack.
You can also use turkey bacon instead of pork bacon. Ground turkey or chicken is the perfect way to replace ground beef. I’ve also heard of people that slice steak into thin slices, fry them on the stove, and then use them instead of ground beef too.
How To Freeze Soup
This is a fantastic meal to freeze and save for later. Here’s how to freeze it so it reheats perfectly (and fits in your freezer). First, cook the soup and then let it cool off completely.
Then, pour the soup into a resealable and freezer-safe food storage bag. Place the bag of soup flat on a baking sheet. Put the baking sheet in the freezer. After the soup is completely frozen, it will be flat.
At this point, you can remove the baking sheet and keep the frozen soup in the freezer for up to 6 months.
What To Serve With Soup
Add something crunchy to the side, like these keto bacon wrapped onion rings. If you are eating this soup for lunch, make some easy BLT egg sliders along with it. Now you have a high-protein and low-carb lunch.
Since the cheeseburger soup is really filling by itself, I like to munch on some keto mozzarella cheese sticks with it. They are bursting with flavor and I can dip them into the soup.
Some people like to eat a salad with their soup. If that’s you, then try this keto tomato soup or maybe you’ll like a low-carb Olive Garden copycat salad. Either way, you can’t go wrong!
Keto Soup Meal Prep
This creamy and filling soup is the perfect thing to store in your meal prep. Since I used heavy whipping cream in it, the broth might thicken a bit in the refrigerator. Don’t worry, it will all melt again when you reheat it.
Store this soup in the refrigerator without toppings or garnishes (including the bacon pieces). Garnishes and toppings will soften if you refrigerate them on top of the soup.
Keep the soup in a tightly sealed container in the refrigerator for up to 3 days.
