This is a meal kids love and it’s low-carb and gluten-free too. Keto BBQ chicken sheet pan marries two amazing flavors into one amazing dinner.
Keto Chicken Sheet Pan
I love a sheet pan dinner! Just cut up everything, add the seasoning, and roast them together. Dinner is ready!
And this keto chicken sheet pan dinner is ready in 30 minutes. It’s the perfect recipe when you don’t feel like cooking, but you still want to make a healthy dinner for everyone.
There is one extra step in this recipe. Since chicken and cauliflower cook at different rates, I cooked the chicken in a skillet first and then roasted everything with the cauliflower.
To save yourself time, you can cook the chicken ahead of time and keep it in the fridge until you’re ready to roast everything.
BBQ Chicken Sheet Pan
It’s no secret that chicken breasts dry out when they are fried or roasted. So, to keep the chicken juicy and delicious, I added some BBQ sauce before I baked them.
And let me tell you, that combination of BBQ with ranch seasoning is out of this world! The flavors pop off the chicken and cauliflower!
Keto dieters, be careful with the BBQ sauce you buy. Read the labels and make sure that you buy one that doesn’t have any added sugar.
G Hughes has a fantastic line of sugar-free BBQ sauces and you can find them easily at Walmart.
Chicken Ranch Sheet Pan
This is a complete meal in one sheet pan. You have the chicken and the cauliflower.
You don’t need much else. But if you want to add something to the table, make an easy keto broccoli salad – just be careful about the carbs.
Some keto dinner rolls and fluffy cauliflower mash will also taste perfect with the sheet pan dinner.
Best Vegetables To Roast
The best vegetables to roast are going to be the crunchier ones. As they roast, they will become nice and crispy.
I love roasting things like broccoli, cauliflower, carrots and Brussels sprouts. For this recipe, I only used one vegetable – the cauliflower.
This is because I wanted to keep the carbs within a manageable level, and there are currently 6 grams net carbs in each serving. If you add more veggies, the carb amounts will rise.
Sheet Pan Meal Prep
These flavors store really well in the fridge and taste just as good when you reheat them. Store your cooked chicken, bacon, and cauliflower in an airtight container.
Keep them in the refrigerator for up to three days. Then, add it to pasta, cauliflower rice, or on top of your favorite chopped salad.
You can freeze this recipe, too. Place it in a freezer-safe container or storage bag and freeze it for up to six months. Then, reheat it in the oven, in a skillet, or in your air fryer.
