I’ve made sheet pan sausage and veggies before, and this ratatouille is a lot like it, but has flavors that are unique and make it stand out.
Sheet Pan Ratatouille
Other than the Disney movie, have you heard of or made ratatouille before? Traditionally, this recipe comes from France. It’s usually made with stewed vegetables.
Some chefs will serve it just like a stew. Others bake it in a round dish, with a stunning shell pattern.
It’s mostly made with squash, peppers, and eggplant. Even though eggplant is a bit higher in carbs, it’s ok to eat it in moderation. Add a little bit of it to keep the traditional flavors intact.
Chicken Ratatouille
Ratatouille isn’t usually made with meat. It’s usually a side dish. So feel free to make this without the chicken and serve it on the side with your favorite chicken recipe. It would taste incredible with stuffed hasselback chicken.
In order to make it an entire meal, I added diced chicken breasts to the sheet pan.
This is the perfect thing to add to your meal prep. Store it in an airtight food storage container and keep it in the fridge for up to three days.

Have fun with this recipe and change the ingredients up to suit your tastes or lifestyle. You can use any type of vegetable that you like. Just remember that carrots have more carbs, so use them sparingly.
Chicken thighs will work perfectly instead of chicken breasts. And if you can, use as many types of fresh herbs that you can. I used dried Italian seasoning, but fresh rosemary and parsley would tastes so much better.

Ingredients:
Boneless, skinless chicken breasts
Olive oil
Dried Italian seasoning blend
Minced garlic
Salt and black pepper
Medium eggplant
Yellow squash
Zucchini
Red bell pepper
Small red onion
Roma tomatoes
Fresh basil
Instructions:
Preheat the oven to 425 degrees. Prepare a large rimmed baking sheet with parchment paper.
In a bowl, mix together the chicken, 1 tablespoon olive oil, 1 teaspoon Italian seasoning, 1 teaspoon minced garlic, salt, and black pepper. Set aside.
In a large bowl, toss together the eggplant, squash, zucchini, red bell pepper, onion, and tomatoes. Add the remaining olive oil, garlic, and seasonings. Toss again to distribute evenly.
Transfer the vegetables to the prepared baking sheet. Over the vegetables, drop the chicken.
Bake for 20 to 25 minutes or until the chicken is cooked through and the vegetables have reached your desired tenderness.
Prior to serving, top the chicken and vegetables with the snipped basil.
