This cabbage au gratin is the perfect replacement for au gratin potatoes. Au gratin is a French phrase that literally means “by grating.” Traditionally, au gratin recipes are covered in breadcrumbs and cheese and then they are made crispy by placing them under a broiler. 

Keto Cabbage Au Gratin

This cabbage au gratin is also broiled, so it comes out with that same iconic crust on top with all that melted cheese underneath.

The best thing about this cabbage au gratin recipe is the bacon! I love how it adds a delightful crunch to the cheesy cabbage. Whenever you cook keto meals, remember to use sugar-free bacon.

Sometimes there are bacon cured in maple syrup, which will give you hidden carbs. 

I prefer green cabbage for this recipe. It has a slightly sweeter flavor and as it cooks, it tenderizes beautifully. You can also use red cabbage, but it will be crunchier.

Cabbage is a mild vegetable that tastes delicious with any meat that you cook. This au gratin recipe is flavorful with an earthy and savory flavor. It will taste perfect with chicken coq au vin (another French recipe).

The cheesy cabbage also tastes yummy with some sweet keto pork shoulder. That’s a slow cooker recipe, so dinner will be ready without much effort at all. 

The creamy flavors in the cabbage also pair well with keto Salsbury steak. It has a rich, savory broth topped with mushrooms, so the mild cabbage side dish rounds out the flavors perfectly.

You can serve this fancy side dish at large family gatherings. In fact, one head of cabbage will feed eight people! It’s a budget-friendly side dish too, since cabbage is a low-priced veggie, and all the other ingredients are pantry staples.

It’s easy to turn this side dish into the main course or entree. Just mix some shredded chicken in with the cheesy sauce. Or shred the cabbage instead of cutting it into wedges.

Then, layer the shredded cabbage in a casserole dish with some shredded chicken and the cheesy sauce. It’s an easy way to make a one-dish meal for your family. 

Keto Cabbage Au Gratin Recipe

Cook Time: 1 hour 15 minutes
Servings: 8
Net Carbs: 6 net carbs per serving

Ingredients:

Head of cabbage 
Olive oil
Butter
Onion 
Minced garlic
Italian seasoning
Fresh thyme
Heavy whipping cream
Shredded gouda cheese
Bacon pieces and Parmesan for garnish
Salt and pepper 

Instructions:

Heat the oven to 350 degrees.

Keto Cabbage Au Gratin
Drizzle cabbage with olive oil and season with salt and pepper to taste. Add cabbage to a greased 9×13 baking dish and bake for 40 minutes.

While cabbage is roasting, add butter to a skillet over medium heat, and saute the onions until softened.

Add garlic, and saute for 30 seconds.

Pour in heavy whipping cream, Italian seasoning, fresh thyme and salt and pepper to taste.

Simmer until sauce thickens. Remove, and set sauce aside.

Pour sauce over the roasted cabbage, and bake for another 30 minutes.

Remove, top with  cheese, and broil for 2-3 minutes.

Ingredients
  

  • 1 head Cabbage cut into wedges
  • 2 tbsp Olive Oil
  • 2 tbsp Butter
  • 1/2 Onion chopped
  • 2 tsp Minced Garlic
  • 1 tsp Italian Seasoning
  • 1 tbsp Fresh Thyme
  • 1 1/2 cups Heavy Whipping Cream
  • 4 ounces Shredded Gouda Cheese
  • Bacon Pieces For Garnish
  • Parmesan Cheese shredded, for garnish

Instructions
 

  • Heat the oven to 350 degrees.

  • Bake for 40 minutes.

  • Stir in the garlic, and saute for 30 seconds.
  • Pour in the heavy whipping cream, Italian seasoning, fresh thyme and salt and pepper to taste. Simmer until the sauce thickens. Remove, and set aside.
  • Pour the sauce over the roasted cabbage, and bake another 30 minutes.
  • Remove, top with the cheese, and broil for 2-3 minutes.
  • Garnish with bacon pieces, parmesan cheese and chopped parsley if desired.
