What is Coq Au Vin
This recipe is a French treat for your dinner table. I had to look up how to pronounce it. In French, it is pronounced, “caulk oh vahn.”
Coq au vin is a chicken stew that is braised and simmered in a rich wine sauce. The classic recipe uses Cognac, dry red wine, chicken stock, and a whole chicken cut into eight pieces, (among other herbs, vegetables, and spices).
To keep my version low in carbs, I used red cooking wine instead of dry red wine. I also omitted the Cognac, but you can add a dash of it if you want to give it a more traditional flavor.
Chicken Coq Au Vin
In order to keep this as close to the original as possible, you should use whole chicken pieces. You will need eight pieces of chicken, including the bone-in legs and thighs. As these chicken pieces cook, the meat will fall off the bone.
It becomes so tender and juicy that you literally won’t need a knife.
When you buy bacon, pay close attention to the labels. Only buy bacon that isn’t cured with maple syrup or other types of sugar. For the best flavor and texture, I suggest using thick-cut bacon.
Keto Coq Au Vin
I used red cooking wine because it is really easy to buy whenever you need it. You can also choose to use your favorite dry red wine instead. Something like Burgandy will taste exquisite in this sauce.
The dryer the wine, the less sugar it will have in it, so don’t use a sweet red or dessert wine.
You also want to make sure that you use fresh thyme. Dried thyme doesn’t have a lot of flavor to it. Fresh springs of thyme smell aromatic and release its flavors into the sauce as it simmers.
Baked Coq Au Vin
The flavors in this cooked chicken is one of the best things about this dish. You can save the chicken and use it over again in your meal prep. In fact, this chicken will taste delicious on top of some lettuce, mixed into a chicken salad, used in chicken soup, or just enjoyed a second time by itself with a side of veggies.
Store leftover baked chicken in an airtight container in the refrigerator for up to three days. It’s best if you store it without the bones. Keep just the meat and it will be easier to reuse the chicken in different recipes.
What To Eat With Coq Au Vin
This savory French chicken stew has such a rich sauce that you’ll want to have some sort of roll or bread for dipping. Make some keto rosemary rolls on the side with it.
You’ll also want to prepare some veggies on the side. Garlic butter zucchini and squash has a slightly sweet flavor and a lovely addition of aromatic garlic.

Ingredients:
Chicken (bone in legs and thighs)
Bacon
Onion
Minced garlic
Chicken broth
Red cooking wine
Sprigs of fresh thyme
Sliced mushrooms
Bayleaf
Tomato paste
Salt and pepper
Instructions:
Preheat the oven to 250 degrees.
Add the chopped bacon to an oven-proof skillet over medium high heat, and brown completely. Place onto a paper towel lined plate to drain. Drain all but a tablespoon of the bacon drippings from the skillet.
Season the chicken with salt and pepper on both sides, and brown evenly on all sides. Remove, and set aside.
Place the onion into the skillet, and saute for a few minutes.
Stir in the garlic, and reduce the heat to medium.
Pour in the chicken broth and red cooking wine.
Mix in the tomato paste, bayleaf and thyme as well as salt and pepper to taste.
Bring the mixture to a light boil.
Return the chicken and bacon to the skillet.
Cover and bake for 55 minutes.
Remove the cover, add the mushrooms and bake for another 15 minutes.

- 1 tbsp Tomato Paste
