What Is Chicken Madeira 

The popular chain restaurant The Cheesecake Factory recreated chicken marsala and the result was tender, juicy chicken in a mushroom wine sauce that they called chicken Madeira.

What is Madeira? It’s a type of wine named after an island off the coast of Portugal. If you don’t have any Madeira wine, you can use sherry or another type of dry cooking wine. 

Most chicken Madeira recipes will have the same ingredients in common: chicken, mushrooms, and a wine sauce or gravy.

In fact, this is a perfect recipe to make when you’re hosting a fancy party for guests or you are making a special dinner to celebrate something. Everyone will love every bite of this savory chicken.

This is a low-carb recipe, but you’ll have to be very careful with how much you eat. There are 10 grams of net carbs in each serving.

That amount can still fit in with your macros in a keto diet, but you’ll have to carefully monitor what you eat the rest of the day, so you don’t go over. 

The best way to cut back on your carbs is to use less mushrooms and asparagus. Those two veggies are higher in carbs, but they are full of nutrients too. If you can afford the extra carbs, this recipe is really good for you.

What To Eat With Chicken 

This chicken recipe is bursting with so much flavor that you’ll want to serve it with some lighter sides. 

Keto Chicken Madeira

For something cold, add some easy keto broccoli salad to the table. Some keto dinner rolls and fluffy cauliflower mash will also taste perfect. In fact, I like to serve the chicken Madeira on top of cauliflower mash, like you would for mashed potatoes. 

For a veggie, make bacon and green beans. The mild, savory flavors pair well with the mushroom wine sauce on the chicken. 

Other sides to add to the table include garlic knots, or keto breadsticks. Just add your favorite low-carb breads to the side and dinner is ready. If you want more veggies to the dinner, add a broccoli salad. 

Skillet Chicken Recipe 

This entire recipe only takes 30-45 minutes to make, from start to finish. If you want it to cook quicker, I suggest pounding the chicken thinner or slicing it really thin.

Remember to cook the chicken until it reaches an internal temperature of 165F. 

Keto Chicken Madeira Recipe 

Here’s the list of ingredients that you’ll need to make this keto chicken Madeira recipe. The exact measurements and instructions are in the printable recipe card, just a little below.

Cook Time: 25-30 minutes

Net Carbs: 10 net carbs per serving

Ingredients:

Olive oil
Chicken breasts 
Salt and pepper
Butter
Mushrooms 
Asparagus
Onion 
Minced garlic
Sherry cooking wine (substituted for Madeira wine to make the recipe low carb friendly)
Broth
Heavy whipping cream
Mozzarella cheese shredded
Italian seasoning

Instructions:

Heat the oil in a skillet over medium high heat.
Season the chicken with salt and pepper to taste, and place into the heated skillet.

Sear the chicken evenly on both sides until browned and cooked partially. Remove and set aside. Drain the oil from the skillet.
Reduce the heat to medium, and add the butter to the skillet.

Place the mushrooms and onions into the skillet, and saute until softened.

Stir in the garlic, and saute another 30 seconds.

Pour in the sherry, and simmer until half of the liquid has been reduced.

Add the chicken broth to the skillet, and return the chicken. Cover and simmer until the chicken is mostly cooked through.

Add the asparagus and Italian seasoning. Cover and simmer until the asparagus has been cooked.

Stir in the heavy whipping cream and simmer until the sauce thickens slightly.
Remove the skillet from the heat, and sprinkle the mixture with the mozzarella cheese.

Place the lid on the skillet, allow the cheese to melt and then serve.

Ingredients
  

  • 2 tbsp Olive Oil
  • 2 large Chicken Breasts cut in half lengthwise
  • Salt and Pepper to taste
  • 2 tbsp Butter
  • 8 ounces Mushrooms sliced
  • 1/2 pound Asparagus trimmed and halved
  • 1/2 Onion chopped
  • 2 tsp Minced Garlic
  • 1 cup Sherry Cooking Wine substituted for Madeira wine to make the recipe low carb friendly
  • 1 cup Chicken Broth or Vegetable Broth
  • 1/2 cup Heavy Whipping Cream
  • 1 cup Mozzarella Cheese shredded
  • 1/2 tsp Italian Seasoning

Instructions
