Keto Kielbasa Soup
Have you ever made soup with kielbasa sausage? Also called Polish sausage, this cured meat tastes amazing fried, roasted, and even sliced and added to soup!
Kielbasa sausage is naturally low in carbs and sugar free. I love using it in my keto recipes because it always adds a ton of flavor. Sheet pan sausage and veggies is another fantastic way to cook this sausage.
Kielbasa Vegetable Soup
There are just five grams net carbs in each serving of soup. If you want to cut the carbs down even lower, just leave out the carrots.
Carrots are so good for you, though, that it’s worth it to keep them in the soup! They are a wonderful source of vitamin A, beta-carotene, and antioxidants.
Cabbage, spinach, and celery are all very low-carb veggies. They are high in fiber and will nourish your body with the nutrients it needs.
Sausage Vegetable Soup
If you are going to replace the vegetables with other choices, you will have to recalculate the macros. You could add some zucchini and kale without altering the carbs very much.
You could also use ground pork sausage instead of kielbasa sausage. Crumble and brown the sausage first and then add it to the soup. I actually love meatballs in my soup – like this naked wonton soup.
Keto Soup Recipe
I made this soup on my stove. It only takes about 30 minutes, it’s a really fast family dinner recipe. If you want to save yourself even more time, you can also make this in the slow cooker.
Just chop and add all the ingredients to your CrockPot. Then, turn it on and let it cook on low for about 4 hours or on high for about 2 hours.
My only warning about using the slow cooker is that it is really easy to overcook Kielbasa. If you try to cook this on low for 8 hours, the sausage will become too soft.
How To Freeze Soup
This is the perfect soup to make as a freezer meal. You don’t even have to cook it first. Just add all the chopped and prepped ingredients to a freezer-safe airtight food storage bag. Then, lay it flat on a baking sheet and put the baking sheet in the freezer.
Once the bag of soup mix is frozen solid, you can remove the baking sheet. Keep the soup in the freezer for up to six months.
When you are ready to make the soup, let it thaw in the refrigerator overnight. Then, cook it in the slow cooker or on the stove.

Carrots

Kielbasa sausage
Minced garlic
Butter
Paprika
Chicken broth
Salt and pepper
Dried basil
Red pepper flakes for garnish (optional)
Instructions:
Melt the butter in a pot over medium heat.
Add the onions, carrots, celery and cabbage to the pot, and saute until the vegetables have softened.
Mix in the garlic, paprika, basil and salt and pepper to taste. Saute another 30 seconds.
Stir in the sausage.
Pour in the chicken broth, and simmer uncovered for 10-15 minutes.
Mix in the spinach, and simmer until wilted.
Serve garnished with red pepper flakes if desired.

- 2 cups Cabbage chopped
- 3 cups Spinach

- 14 ounces Kielbasa Sausage sliced
- 2 tsp Minced Garlic
- 2 tbsp Butter
- 1 tsp Paprika
- 5 cups Chicken Broth
- 1 tsp Dried basil
Instructions
