Keto Cheesy Cauliflower Rice
I think that what makes this recipe stand out is the fresh cauliflower I used. I’m sure that you can use frozen cauliflower rice too, but it will have a different texture.
Ideally, you want the cauliflower rice to have a slight crunch to it. Frozen cauliflower rice comes out really soft. When you cook it in the skillet, it will get even softer.
Is Sausage Keto-Friendly?
Sausage can certainly be a type of keto-friendly meat, as long as you choose the correct kind. Don’t use anything with “maple” in the name. As long as the sausage is sugar-free, it will be perfectly fine to use in this recipe.
I used ground Italian sausage. If you want it to have some spice, use the spicy sausage. It will taste amazing with it!
Best Cheese With Cauliflower
Honestly, any type of cheese tastes fantastic with cauliflower rice! I used shredded cheddar cheese and heavy whipping cream. Mozzarella cheese will melt in a different way and taste even richer and creamier. Colby Jack, Monterey Jack, or Pepper Jack cheeses will all have a bolder flavor.
The type of cheese you use shouldn’t affect the carb count much, if at all. So, have fun trying different things!
