I’m always looking for ways to lower my grocery bill. Meat protein seems to be the most expensive item on my list. To lower the cost, I like to buy my meat in bulk. This recipe is a fantastic way to use boneless skinless chicken thighs.
You can use thighs with the bones and skins too, but I recommend removing the skin before cooking it. The best thing about cooking chicken thighs is how juicy they are. Chicken breast tends to dry out faster, but chicken thighs retain cooking liquid better.
You can use chicken breasts in this recipe. Just be careful and don’t overcook them. That way they won’t become dry.
Keto Chicken Skillet Recipe
With only 2g net carbs, this is one of my favorite skillet chicken recipes. It’s fancy enough to make for a romantic date night or to celebrate a special occasion. It’s also easy enough to make for a casual family dinner.
If you don’t have a cast-iron skillet, get one! I think it infuses more flavor into every recipe that I make on it. I love my cast iron skillet. Plus, it is oven-safe, so I can place the chicken in the oven at a low temperature to keep it warm while I get ready for dinner.
This recipe is also perfect for your meal prep later on in the week. Just store some leftovers in an airtight food storage container and keep it in the fridge. It will stay fresh for about 5 days.
Keto Crockpot Chicken Thighs
This recipe can be turned into a slow cooker recipe with just a few tweaks. Sear the chicken thighs on the stove first, before you put them in the crock pot. This way they won’t be too soft.
I also suggest only cooking it for a short time. Cook it on low for 4-6 hours or on high for 2-4 hours. This way the sauce won’t cook down too much.
Mushroom Wine Sauce
Seriously, this mushroom wine sauce is the best part of the recipe! I used white cooking wine because white wine pairs best with white meat like chicken. You can easily make this exact recipe with steak. If you do, use red wine in the sauce.
They sell white cooking wine in the condiment section of the grocery store. Alternatively, you can use a little bit of a dry white wine in the sauce too. My favorite types of white wine to cook with include Pinot Grigio, Pinot Gris, Sauvignon Blanc, and Pinot Blanc.
Remember the type of wine you used in the sauce and serve it for dinner. Since it will have lots of the same flavor notes, it will enhance your meal in the best way!
Serve this skillet chicken dinner with cauliflower mash and some bacon-wrapped asparagus. Now you are ready for an impressive dinner.
Best Way To Cook Mushrooms
Use your favorite type of mushrooms in this sauce. I like shitake or baby bella mushrooms. Do not overcook the mushrooms. When you add them to the skillet, make sure they are completely coated in the garlic butter. Then, deglaze the pan with the mushrooms and the white wine.
You are going to smell the most amazing aromas at this step! Sauteeing mushrooms are my favorite way to cook them, second to making stuffed mushrooms. Those are incredible too.

Ingredients:
Boneless Skinless chicken thighs
Olive oil
Italian seasoning
Salt and pepper
Garlic
Butter
White cooking wine
Heavy whipping cream
Grated parmesan cheese
Dried basil
Parsley for garnish
Instructions:
1. Heat the olive oil in a large skillet over medium high heat.
2. Season the chicken on both sides with the Italian seasoning and salt and pepper to taste.
3. Add the chicken to the heated skillet and sear on both sides evenly until cooked through. Remove and set aside.
4. Drain the excess oil from the skillet.
5. Reduce the heat to medium and add the butter and garlic to the skillet. Saute for 30 seconds.
6. Stir in the mushrooms and toss to coat in the garlic butter.
7. Pour in the white cooking wine to deglaze the bits off the bottom of the pan, and cook the mushrooms until softened.
8. Add in the heavy whipping cream and basil. Stir and simmer until the sauce has thickened.
9. Stir in the parmesan cheese, return the chicken to the skillet and serve topped with parsley for garnish.

- 1 cup Heavy Whipping Cream
- 1/4 cup Grated Parmesan Cheese
- 1/2 tsp Dried Basil
