Low-Carb Coconut Curry Chicken
Whenever I go out to eat, my favorite place is an Indian restaurant. Indian food is naturally low in carbs – especially if you avoid the Naan and rice. That is why I wanted to try and recreate some of my favorites at home.
Coconut curry chicken is by far one of my favorite Indian recipes. It is both creamy and spicy with the most vibrant and powerful spices. I really do think that my recipe tastes just like what you might order from a restaurant!
Keto-Friendly Curry Chicken
This recipe is perfect for meal prep. You can store the chicken on top of some cauliflower rice in your meal prep containers in the refrigerator and it will stay fresh for up to 3 days.
Or, shred the chicken and add it on top of some lettuce for an Indian-inspired salad. The options are truly endless.
Easy Instant Pot Chicken Dinner
Since you are making this in an Instant Pot, it’s one of the easiest recipes you will ever make. Plus, the clean-up is quick too! Between the sauteeing and the cooking, this meal is ready in less than 30 minutes.
This is one of my favorite last-minute meal ideas. It’s one that I make for my family when I don’t know what else to make for dinner – or I ran out of time and need something quick.
Healthy Coconut Curry Sauce
This coconut curry sauce is so good for you! Not only does coconut oil have lots of healthy fats that will help your body burn even more fat, but there are lots of health benefits associated with curry powder too.
There is turmeric in curry powder and turmeric is known for helping to reduce inflammation in the body. This means it helps with pain and even arthritis.
Not only that, but the combination of spices in this curry sauce is really good for your gut health too. Together, they help relieve gas, bloating, and help your body digest your food more effectively.
Low-Carb Curry Chicken With Cauliflower Rice
There are a lot of different ways that you can customize this recipe – so have fun swapping out ingredients or adding a little more spice to it. Make it taste the way you like it!
If you want a vegetarian version, use cauliflower instead of chicken in the coconut curry sauce.
You can also customize it with different vegetables too. Add some peas, green beans, or even peppers to the dish.
I like to eat this on top of my favorite cauliflower rice, or on top of some butter lettuce, or just on its own.

Keto Coconut Curry Chicken Recipe

Coconut oil
Skinless chicken breasts
Garlic powder
Curry powder
Ground turmeric
Salt
White pepper
Onion
Water (if needed to deglaze)
Fire-roasted diced tomatoes
Tomato paste
Lime
Can coconut milk
Unsweetened flaked coconut
Cilantro
Instructions:
1. Heat the electric pressure cooker using the “saute” function until “hot.”
2. Meanwhile, place the chicken into a zip top storage bag. Add the seasonings and seal the bag. Shake and mash to cover the chicken in the seasonings.
3. Add the coconut oil to the pressure cooker and then add the chicken and the onion. Brown the chicken on all sides.
4. If the bottom of the instant pot collects frond (baked on bits,) deglaze the bottom of the pot by adding a tiny amount of water or chicken stock and scraping with a wooden spoon.
5. Place all the ingredients for the sauce EXCEPT the coconut milk over the chicken. Do not stir.
6. Cover the electric pressure cooker and set the valve to “sealing.”
7. Program the electric pressure cooker using the “pressure cook” or “manual” function for 7 minutes. When the cook cycle is completed, quick release the pressure.
8. Once the pressure has released, remove the chicken but keep warm. Add the coconut milk to the sauce and switch the electric pressure cooker back to “saute” mode. Cook the sauce approximately 10 minutes, stirring often, until the sauce has thickened. Return the chicken to the pot and stir to coat.
9. Serve alone or over cauliflower rice.

- 15 ounces Fire-Roasted Tomatoes 1 can

- 1 Lime Zest and Juice
- 13.5 ounces Coconut Milk 1 can
- 3 tbsp Unsweetened Coconut Flakes for garnish
