What flavors do you think of when you hear the phrase “southwest recipe”? For me, it’s all about the peppers!
I think of bright yellow and red peppers, with green chiles and some meaty beans. I took all of my favorite southwest ingredients and made a salad out of them.
This isn’t a creamy salad and it isn’t a lettuce-based salad. My keto southwest salad is kind of like a burrito bowl, but without any rice.
I didn’t even use cauliflower rice, but you sure could add it to your salad if you want. This salad is made with my favorite keto-friendly veggies, some chicken, and shredded cheese and topped with cilantro, lime juice, and ranch seasoning.
Are Black Soy Beans Keto
Yes, black soy beans are keto friendly. In just 1/2 cup, there are only 2 grams net carbs. They taste just like black beans, too!
They have very similar flavor and texture. Did you know they are also high in protein? Each serving has almost 9 grams of protein!
Of course, this salad will taste delicious without the soy beans. They add texture, color, and nutrients, but the salad will be fine without them.
I don’t recommend adding regular beans to this salad. It will add too many carbs to your recipe.
Best Dressing For Southwest Salad
If you search for southwest salad dressing, you’ll find one ingredient in common with almost all of them – lime! I used lime in my salad too, so you’ll love the refreshing citrus burst that it gives.
In addition to the lime juice, I added some cilantro and ranch dressing. It’s amazing how well the ranch dressing goes with all of the ingredients in this recipe.
It really brings out the natural sweetness in the peppers! If you want to give the salad a bit more kick, make keto chicken bacon ranch casserole earlier in the week and then shred the chicken and use it in this salad.
It has many of the same flavors.
What To Eat With Salad
Since this salad has soy beans, veggies, and chicken in it, it’s a complete lunch by itself. If you’re still a tad hungry, then add a few keto chicken bacon ranch roll-ups with it. They have the same ranchy flavors.
Do you need more protein? Serve the salad with a serving of low-carb tropical island chicken or keto crockpot kalua pork and cabbage.
To stay within the southwest theme, add some sliced veggies and homemade guacamole to the table. Yum!
How To Meal Prep Salad
Add this zesty salad to your weekly meal prep. Store the salad – with the dressing added to it – in an airtight container and keep it in the refrigerator. For the best results, eat it within three days.
If you want to keep your veggies nice and crispy, then I suggest storing them without the lime juice and ranch seasoning on them. Add the dressing right before you eat it. I think it tastes better this way.
