Have you ever been to a luau where they roasted a whole pig over a pit? If you have (or even if you’ve seen photos of it) then you have an idea of what kalua pork is.
Kalua means “from the pit.” So, if the food is cooked underground in an imu, it’s called “kalua.”
It has a similar flavor to food that you cook in a smoker in your backyard. But the good news is that you don’t have to have a smoker to make delicious kalua pork!
You can make it in your slow cooker.
Slow Cooker Pork and Cabbage
How do you make smoky meat in the slow cooker? Add some liquid smoke!
It’s my secret ingredient, and I love using it. It’s literally made by condensing the smoke from burning wood.
This flavoring agent is sold in a glass bottle, and it only takes a tiny bit to make the entire pork loin taste smoky. Using liquid smoke in the slow cooker produces tender meat that falls apart on your fork, with the essential flavor of burning wood.
It’s the easiest way to make kalua pork and cabbage.
Keto Pork and Cabbage
It’s no secret how well pork and cabbage go together. After I made keto pork and cabbage in creamy bacon sauce, my kids actually ate all their cabbage!
So, for this recipe, I used chopped green cabbage. You can throw in some red cabbage too, if you want to add more color.
For the spices, add some pink Himalayan sea salt, soy sauce, and fresh ground ginger. If you don’t want to chop up fresh ginger, then add about a tablespoon of ginger paste. And white sea salt will taste just as good as pink.
What To Eat With Pork Loin
Keep the side dishes simple. Something like mashed cauliflower will taste delicious with the smoky pork and cabbage.
Make the copycat Olive Garden salad. It has lots of the same spices and flavors. If you’d like something sweeter, make the cucumber and strawberry salad.
Then you just need to add another veggie to the side. Keto cauliflower au gratin is a perfect choice because it has lots of cheese and bacon.
How To Store Cooked Pork
Enjoy the kalua pork throughout the week. Store the pork and cabbage in an airtight container in the refrigerator for up to three days.
You can freeze the pork and cabbage, too. Store them in a freezer-safe bag or container for up to six months.

Ingredients
- Pork Shoulder Roast
- Chopped Cabbage
- Pink Himalayan Salt
- Black Pepper
- Soy Sauce
- Ground Ginger
- Liquid Smoke
- Water
Directions
Place the pork into the bottom of the slow cooker. Whisk together the soy sauce, salt, pepper, ground ginger, liquid smoke and water in a mixing bowl.
Pour the mixture over the pork, cover and cook on high for 6 hours.
When the pork is close to being done, add some of the liquid from the slow cooker to a skillet over medium heat.
Place the cabbage into the skillet, cover and saute until softened.
Remove the pork from the slow cooker, and shred it with two forks. Return the pork to the slow cooker along with the cabbage, and stir to combine well before serving.

- 4 cups Chopped Cabbage
- Pink Himalayan Salt to taste

- 3 tbsp Soy Sauce
- 1/2 tsp Ground Ginger
- 1 tsp Liquid Smoke
- 1 cup Water
Instructions

Place the pork into the bottom of the slow cooker.
