When I say this recipe is easy, I mean it’s so easy you can cook breakfast before the kids wake up and you’ve had your coffee. Even half-asleep, you can’t mess up these avocado baked eggs.

Baked Avocado Egg
All you have to do is bake the eggs inside some halved avocados. I use a cast-iron skillet because it has an easy-to-carry handle.
You can also make a baked avocado egg in your air fryer. Preheat your air fryer to 450. Then bake the avocado eggs for about 12 minutes. Check on them after 10 minutes and remove them after they are cooked to your liking.
High-Fat Breakfast
Avocados are a fantastic source of healthy fats. They are also high in fiber, so they really do a wonderful job of waking up your gut and getting it working correctly first thing in the morning.

The best way to ripen an avocado is to place it in a dark paper bag. Do this overnight. By morning it will be ready to use!
If you don’t eat all your breakfast and you want to save it for later, add a drizzle of lemon juice on top of the avocado and store it in an airtight container in the refrigerator. The lemon juice will prevent the avocado from turning brown.
Egg Bake Easy
Be generous with the everything bagel seasoning! It adds so much flavor the avocado and eggs. You can even add a dash or two of hot sauce for some heat.
It will add some carbs, but you can even add a teaspoon of fresh salsa on top to make them southwest eggs.

Slice the avocados in half lengthwise, remove the pits. Use a spoon to scoop out a little of the flesh surrounding the hole where the pit was on each avocado half, making room for the egg.
Place the avocado halves into an oven-proof skillet. Crack an egg into the center of each avocado half.
Bake for 15 minutes.
Remove, and sprinkle with Everything bagel seasoning, chives and bacon before serving.
