Chili Salad
This southwest chili salad is made without beans, so it’s easy on your stomach and oh-so good for you, too! You could call this a healthy taco salad or southwest ground beef salad.
If you want it to taste more like chili and less like tacos, then use chili powder instead of taco seasoning. Easy!Even though I used taco seasoning, I called this a chili salad because I added tomato paste to thicken (and flavor) the ground beef.

Ground Beef Salad
I love cooking with ground meat. It’s so easy and so quick! Plus, you know when it’s fully cooked because it’s no longer pink.
You can easily make this chili salad with either ground chicken, pork, or turkey. The only thing you should know is that leaner meat – like chicken or turkey – has less flavor than beef.
So, you might have to add more spices to the chili. This is easy to do – just sprinkle some cayenne pepper in it! Or add some diced bell peppers or a few jalapeno pepper slices.
Keto Salad With Beef
Every single ingredient in this salad can be changed or swapped. Use what you have or change my recipe to match what you’re craving.
Use any type of lettuce that you enjoy. For the cheese, I used fiesta blend, but you can shred pepper jack cheese at home or use sharp cheddar.
It’s even tasty with a few slices of American cheese that you tear up into pieces. For the crunchy parts, I crushed a small bag of Quest nacho cheese chips.
As a swap, use crushed pork rinds, or leave this part out entirely. And the tomato is completely optional too. If you leave them out, you’ll lower the amount of carbs in the salad.
What To Eat With Salad
The best thing to serve with keto chili salad is a hot bowl of keto white chicken chili. The flavors are just different enough to complement each other in the best way.
To stick with the Mexican theme, make keto Mexican street cauliflower on the side with the salad. Other southwest recipes that will taste amazing with the salad include keto Mexican cauliflower rice and arroz con Pollo.
Then maybe add some guacamole to the table with taco lasagna and you have a feast!
Salad Meal Prep
It’s best to store all the different parts of this salad in separate containers. Keep the chili in one container, the toppings in another, and the lettuce in another.
Then, all you have to do is put everything together! Some people like to store their salads in a mason jar, with the wet ingredients on the bottom (in this case, the chili) and the crispy ingredients on top (the lettuce).
If you do this method, eat the salad within two days to get the best results.

Ingredients
- Green Leaf Lettuce
- Fiesta Blend Cheese
- Roma Tomatoes
- Avocado
- Sour Cream
- Quest Nacho Cheese Chips
- Ground Beef
- White Onion
- Minced Garlic
- Tomato Paste
- Diced Tomatoes
- Beef Broth
- Taco Seasoning
Directions
Add the ground beef and onions to a pot over medium high heat, and saute until the meat is browned and the onions have softened. Drain the excess grease.
Mix in the garlic, tomato paste and taco seasoning, and saute for another 1 minute.
Pour in the diced tomatoes and beef broth, and stir to combine. Let the mixture simmer for 10 minutes, and then remove from heat and allow to cool.
Place the chopped lettuce into a large serving bowl. Top with the tomato.
Add a layer of the chili down the center of the salad, and top with the cheese.
Layer the avocados on the salad greens. Top the chili with the sour cream.
Sprinkle on the crushed nacho cheese chips and serve.

- 2 Roma Tomatoes chopped
- 1 Avocado diced
- 2 tbsp Sour Cream

- 2 tsp Minced Garlic
- 2 tbsp Tomato Paste
