Turn your boring boneless, skinless chicken breasts into culinary works of art, without all the stress or effort. Even beginning cooks will be able to make this recipe. It’s what I call a “stupid-easy” recipe that is almost fool-proof. All you have to do is prepare all the filling ingredients, then slice open the chicken breast and stuff it with the filling. Sear it and bake it and then dinner is ready!
This might not be the fastest recipe I have ever made, but it sure is one of the most delicious ones! You just can’t beat the taste of biting into a chicken that is filled with cheesy spinach and mushrooms with bits of crispy bacon.
What To Serve With Keto Spinach Stuffed Chicken
This is a very filling meal all on its own. It is almost a one-pot dinner. I think the best things to serve on the side with it will be some keto garlic knots and your favorite vegetable. This keto bacon-wrapped asparagus will taste delightful with the bacon inside the chicken. Of course, you can never go wrong with some yummy cauliflower mash too.
Bacon and Spinach Stuffed Chicken
I think my favorite thing about this stuffed chicken is that it is filled with real bacon bits. They are crispy and salty and add the perfect amount of flavor to the chicken filling.
You can definitely use turkey bacon instead of pork. Or, just leave the bacon out entirely.
Cheesy Chicken Recipe
I used a combination of shredded mozzarella cheese and parmesan cheese, but you can swap with your favorite types of cheese if you want. If you want to use cheddar cheese, try to use white cheddar so that it matches the other types of cheese in the filling.
This entire recipe only has 4g net carbs in each serving! If you track your macros, this is a recipe that is high in healthy fats, really high in protein, and saves you carbs so you can enjoy other types of food with it.
How To Stuff Chicken
When you make this recipe, use thick chicken breasts. Chicken breast tenders are way too small to stuff. Slice the chicken along the longest side. This will give you the most area to place the stuffing.
Remember to always do your chicken prep work on a separate surface from the rest of your recipes so that you don’t contaminate it with salmonella.
Meal-Prep Keto Stuffed Chicken Breast
This cheesy stuffed chicken breast is the perfect thing to add to your weekly meal prep. I like to make a little extra when I am baking them for dinner.
Store the baked stuffed chicken breast in your airtight meal prep container. Keep it in the refrigerator for up to 3 days. When you are ready to enjoy it again, you can reheat it in the microwave or in the oven.

Ingredients:
Chicken Breasts
Butter
Olive Oil
Mushrooms
Onion
Bacon
Raw Spinach
Minced Garlic
Cream Cheese
Heavy Whipping Cream
Shredded Mozzarella Cheese
Parmesan Cheese
Nutmeg
Instructions:
Preheat the oven to 400 degrees.
Add the butter to a skillet over medium heat on the stove.
Saute the onion and mushrooms in the skillet until softened.
Stir in the garlic and saute another 30 seconds.
Mix in the cream cheese until melted.
Whisk in the heavy whipping cream, mozzarella cheese, parmesan cheese, nutmeg and salt and pepper to taste. Saute until the sauce thickens.
Add the spinach and bacon to the skillet and saute until the spinach has wilted.
Remove the mixture from the heat.
Season the chicken breasts with salt and pepper on both sides.
Cut a pocket into the center of each chicken breast, being careful not to slice them all of the way through.
Heat the olive oil over medium high heat on the stove in an oven-safe skillet.
Sear the chicken on both sides to brown well.
Place the skillet into the oven and bake for 25-30 minutes until the chicken is cooked through.
