Chaffle Chips
Have you made chaffles before? I love making them! Chaffles are basically cheese and eggs that are baked in a mini waffle maker. From that basic combination, you can make a huge variety of different types of chaffles.
Since I wanted to use the chaffles as chips to eat with the dip, I sweetened them slightly with some Swerve confectioner’s sugar substitute. Then, let them cool and cut them into strips.

It’s easy to make the dip ahead of time. Just store it in an airtight container and keep it in the refrigerator for up to three days.
Chaffes don’t store nearly as well, because they soften the longer they sit in the fridge. I suggest making them fresh, right before you serve the dip.

Ingredients:
For the chaffle chips:
- Shredded mozzarella cheese
- Large eggs
- Swerve confectioners sugar substitute
- Vanilla extract
For the Dip:
- Cream cheese softened
- Large strawberries chopped and then pureed
- Swerve confectioners sugar substitute
- Vanilla extract
Preheat a mini waffle maker. Add the ingredients for the chaffle chips to a mixing bowl, and whisk to combine well.
Place a ⅕ of the mixture into the preheated mini waffle maker and cook until browned and done to your liking. Remove and let cool.
Repeat step 3 until all five chaffles have been made. Slice the chaffles into triangular shaped chips. Blend together the ingredients for the dip until smooth and creamy.
Serve the chaffle chips with the strawberry dip on the side.

- 1 cup Shredded Mozzarella Cheese

Instructions
