There are only 3g net carbs in each serving of this shrimp scampi. It has a robust flavor that is bursting from the garlic, lemon, and white cooking wine.
In fact, it tastes as good as something you will order from a restaurant. This is one of my favorite recipes to make when I am really craving seafood but don’t want to spend a long time in the kitchen.
Best Keto Shrimp Scampi
This recipe is super easy to make. There are basically three steps. You quickly saute the shrimp. Then, remove them and make the creamy scampi sauce. Finally, add the noodles and return the shrimp to the skillet.
It really is that easy!
I always use fresh lemons because the flavor is so much stronger than jarred lemon juice. Then, I save a lemon and use it for garnish at the end.
Don’t forget to garnish with fresh parsley too. It doesn’t just make it look fancy, but it enhances the fresh flavor of the lemon and garlic in the sauce.
Shrimp Scampi With Palmini
I used palmini noodles because they don’t require any prep – just put them in the skillet and let them heat up. This recipe will also taste amazing with some zucchini noodles or cauliflower rice.
Add scallops to the skillet for a really filling meal. Or, skip the shrimp and make it with just the scallops.
There are so many ways you can modify this recipe. Have fun and add or remove ingredients and customize it for yourself or your family.
Healthy Dinner With Shrimp
I love preparing shrimp for dinner. Not only is it super fast (shrimp takes almost no time at all to cook!) but it is healthy too. It’s so high in protein.
This works for either a dinner or a meal-prep lunch. In fact, reserve a portion of it in some meal prep containers so that you can eat it later in the week.
The shrimp scampi will stay fresh in an airtight container in the refrigerator for up to 3 days. If you notice the sauce solidifying in the refrigerator – this is normal. Just heat it up and it will be creamy again.

Ingredients:
Can palmini linguine noodles
Shrimp
Butter unsalted
Olive oil
Garlic
White cooking wine
Fresh lemon juice
Italian seasoning
Parsley
Salt and pepper
Lemon slices
Instructions:
1. Heat the olive oil and 2 Tbsp butter in a skillet over medium high heat.
2. Add the shrimp to the heated skillet and saute with salt and pepper to taste for several minutes until the shrimp is cooked through. Remove and set aside.
3. Turn the heat down to medium on the stove, and add the remaining butter and minced garlic to the same skillet.Â
4. Saute for 30 seconds.
5. Whisk in the white cooking wine, Italian seasoning and lemon juice.
6. Add the palmini noodles to the skillet and saute in the sauce until about half of the liquid is absorbed.
7. Return the shrimp to the skillet, toss to coat in the sauce.
8. Serve with parsley and lemon slices for garnish.
