I love using this recipe as part of my weekly meal prep. Store it in an airtight container in the refrigerator for up to 5 days.

Canned tuna is a very budget-friendly protein to use for lunch or even a snack. The light tuna will have lower amounts of mercury in it, so I suggest using that.

Choosing oil-packed or water-packed tuna doesn’t affect the healthiness of it, but it does change the taste. I prefer to buy tuna that is packed in oil because it has a lot more flavor. 

Keto-Friendly Lunch 

Mix this up and use canned chicken instead of tuna. I’ve even used a packet of salmon before and it tasted amazing and was really filling too.

How you eat it is entirely up to you. Dig in with a fork or serve it over a bed of lettuce. You can also just cut an avocado in half and scoop this tuna salad on top of the avocado.

Trust me, use fresh basil in this Cashew Tuna Salad Recipe . The fresh basil has a lot more flavor than the dried herbs in your spice rack. I like to use some as a garnish too. 

If you don’t have a lemon, you can use canned lemon juice. When you use fresh lemon juice, it has a stronger taste.

INGREDIENTS:
Cans of tuna
Red bell pepper 
Cucumber
Green onions
Whole cashews 
Fresh basil 
Lemon
Mayo
Salt & pepper

INSTRUCTIONS:
1. In a large bowl, combine drained tuna with chopped ingredients.


2. Stir in ½ cup of mayo and the juice of 1 lemon.  


3. Add a dash of salt & pepper, stir well.

4. Garnish with additional fresh basil, if desired.

Ingredients
  

  • 24 ounces Tuna canned, drained
  • 1/2 Red Bell Pepper chopped
  • 1/2 Cucumber chopped
  • 4 Green Onions chopped
  • 1/3 cup Lightly Salterd Whole Chashews chopped
  • 1/4 cup Fresh Basil chopped
  • 1 Lemon juiced
  • 1/2 cup Mayo

Instructions
 

  • In a large bowl, combine drained tuna with chopped ingredients.
  • Stir in 1⁄2 cup of mayo and the juice of 1 lemon.
  • Add a dash of salt & pepper, stir well.
  • Garnish with additional fresh basil, if desired.
