Have you heard of yakitori skewers? This is a classic Japanese grilled recipe served on skewers. The chicken has a unique blend of spicy and sweet flavors, and it is usually cooked over a BBQ grill.

They are usually covered in some sort of sugar or syrup. My recipe doesn’t use any sugar, and it still has the same sticky-sweet flavor that they are known for!

As the weather warms up, it is time for outdoor grilling! To make these skewers taste authentic, use brown sugar and a honey substitute. This will still caramelize the same way, but it won’t affect your blood sugar.
Some people on the keto diet also try to avoid soy sauce since it has trace amounts of carbs. You can use liquid aminos instead of soy sauce.
Don’t forget to use xanthan gum. You’ll only use a pinch of it, but it is very important. Xanthan gum thickens the sauce without using any flour or cornstarch.

To make these skewers, you should use boneless skinless chicken thighs. They won’t dry out as easily as chicken breast when you grill them. You can also make this recipe with pork loin. Or, use both!
It’s always best to use an instant-read food thermometer when cooking chicken. Chicken should be cooked until it reaches an internal temperature of at least 165F.

Keto Yakitori Chicken Skewers

Ingredients
- 1 1/2 pounds Boneless Skinless Chicken Thighs
- 1/4 cup Chopped Green Onions
- 1/4 cup Swerve Brown Sugar Substitute
- 1 tbsp Sugar-Free Honey
- 1/3 cup Water
- 1/4 cup Soy Sauce
- 2 tsp Ginger Paste
- 2 tsp Minced Garlic
- 3 tsp Rice Vinegar
- 1/4 tsp Xanthan Gum
Instructions

Place the brown sugar substitute, sugar free honey, water, soy sauce, ginger paste, garlic, rice vinegar and xanthan gum in a saucepan over medium heat, and bring to a low boil.

Simmer the sauce until it has thickened. Remove, and let cool slightly to thicken more.

Cut the chicken thighs into bite sized pieces, and season with salt and pepper to taste.

Thread the chicken onto the skewers, and baste in the sauce.

Place the skewers on the grill, and cook for 10-15 minutes, turning and basting often until the chicken is completely cooked through.
