What do you make with garden zucchini? My favorite thing to do with leftover zucchini is to spiralize it and turn it into zucchini noodles.
They have a bolder flavor than other types of noodles, and are so much better for you too! Plus, you can eat them warm or cold – they are delicious both ways.
This BLT Zoodles salad has a tangy apple cider vinegar dressing that makes the earthy zucchini flavors stand out.
BLT Salad
I used cherry tomatoes in this salad. They are juicier and slightly bigger than grape tomatoes, so you’ll need to slice them in half before you add them to the salad.
Can you swap grape tomatoes for cherry tomatoes in a salad? You sure can! But grape tomatoes are smaller, so they are more difficult to slice. I would just add them to the salad without slicing them.
Can you use frozen zucchini noodles in a zoodle salad? Yes, you can use frozen zoodles in this salad. Before you mix them with the other ingredients, thaw them completely and then use a cheesecloth to wring as much liquid from them as possible.
Frozen zucchini noodles tend to hold onto a lot of extra water.
Zucchini Noodles Salad
This is the perfect zoodles salad to add to your meal prep. In fact, after it sets for a day in the fridge, the flavors from the vinegar and spices will soak even more into the zucchini noodles.
I suggest eating it within 2-3 days. The longer the salad sets in the fridge, the softer the arugula will become – which isn’t the most appetizing.
You could also just keep all the ingredients separate until you mix them together to eat them. In fact, the apple cider dressing tastes really good on other chopped salads too.
What To Eat With Salad
A zucchini noodle salad is perfect for lunch. I would serve it with a bowl of your favorite keto-friendly soup and a tasty, high-protein roll-up.
There are a lot of different types of soup that will taste delicious with the BLT salad. Try it with Turmeric zucchini soup. The turmeric is really bold and you’ll enjoy how it pairs with the tangy salad.
If you really love bacon, then serve this salad with a bowl of dill pickle soup with bacon or bacon cheeseburger soup. Both are incredibly filling choices.
