This is a really quick recipe to make, especially if you shred a rotisserie chicken. Or, use leftover roasted chicken from other recipes you’ve made earlier in the week. I love finding new ways to use leftover meat and this is one of those recipes that is perfect like that.
The fresh parsley and crumbled bacon are optional garnishes, but you should totally use them! As you bite into the fresh parsley, it enhances the entire bite! Plus, everything is better with bacon.
Just use bacon that has no sugar added. Basically, avoid any type of bacon that has “maple” in the name.

Cook on HIGH pressure for 7 minutes and let it quick release. It really is that quick!
I also really like roasting spaghetti squash in the oven. In fact, you can roast both halves in the oven at once and then save it until you are ready to make this recipe.

What is the best type of chicken to use in a spaghetti squash casserole? Honestly, any type of chicken will work. Just make sure it is shredded or cut up into small pieces. You can even use boneless skinless chicken thighs.
If you already have cooked chicken and cooked spaghetti squash, this recipe only takes about 27 minutes to make. Do as much cooking and food prep ahead of time as you can and then just throw it together and cook it.
I used a can of ROTEL tomatoes. This gives the recipe a bit of spice! If you like spicier foods, try topping it with some sliced jalapenos and a dash of hot sauce.
Cheesy Baked Spaghetti Squash
This recipe makes delicious leftovers. As it sits in the refrigerator, the flavors all mingle and meld together in an amazing way. Store it in an airtight container in the refrigerator for up to 5 days.
When you are ready to reheat it, either use the microwave or heat it in a skillet on the stove. I prefer the skillet because it keeps the spaghetti squash kinda crisp.
Serve this cheesy chicken recipe with some garlic knots or low-carb garlic mashed cauliflower. Now you have a filling and hearty family dinner!

INGREDIENTS:
Spaghetti squash
Shredded chicken
Shredded cheddar cheese
Cream cheese
Sour cream
Garlic powder
ROTEL
Optional garnish: Fresh parsley, crumbled bacon
INSTRUCTIONS:
1. Cook spaghetti squash your preferred way. I used an Instant Pot, but you can also bake it in the oven. **For the Instant Pot, simply slice the squash in half, place it in the IP with 1 cup of water. Cook on HIGH PRESSURE for 7 minutes.
2. Scrape out the spaghetti strands from the squash. Place in a large bowl.
3. In a separate bowl, combine cream cheese and sour cream. Heat in the microwave for approximately 30 seconds. Stir together.
4. Add garlic salt to the cream cheese mixture, along with ROTEL. Mix well.
5. Combine ROTEL mixture with chicken and spaghetti squash. Pour into a baking dish. Top with shredded cheddar cheese.
6. Cook at 350 degrees F for 20 minutes.
7. Remove from the oven and garnish with fresh parsley and bacon crumbles.
