What Is A Cobb Salad?
When I hear the word cobb, I instantly think of corn on the cobb – which isn’t keto-friendly at all! Thankfully, that’s now what makes a salad a cobb salad.
A cobb salad usually has a mixture of salad greens along with tomatoes, meat, and hard-boiled eggs.
My keto cobb egg salad doesn’t have any lettuce in it. It’s more of a cobb-version of an egg salad. It still tastes incredible! You can serve this egg salad in lettuce wraps or mix it on top of some kale and baby spinach.
Easy Keto Egg Salad
Since eggs are naturally full of protein and low in carbs, they are used in a ton of low-carb recipes. Thankfully, this doesn’t taste like just another keto egg recipe! The dressing is salty and packed with addicting flavor.
The dressing has just 2 easy ingredients – mayo and dry ranch dressing mix. Sometimes, I make extra dressing just so I can dip my fresh cucumbers and raw veggies in it. It’s so good!
Low-Carb Summer Salads
Since this keto cobb egg salad has fresh grape tomatoes in it, it tastes fresh and perfect for summertime lunches. It packs well, so take it with you on your picnics or for your meal prep too.
The Perfect Keto Side Dish
When you make a keto main dish like parmesan chicken wings, serve this egg salad on the side. It has such a fresh burst of flavor and tastes great accompanying any meal.
How To Serve Keto Cobb Egg Salad
Honestly, I prefer to just dig my fork into the egg salad as it is. It’s creamy and filling.
If you want a low-carb wrap, use large-leaf lettuce.
Another idea is to spoon some out on some homemade keto cheese buns. You’ll have a low-carb egg salad sandwich!
How To Store Keto Cobb Egg Salad
If you have leftovers or you want to meal prep with this recipe, it will last about a week in the refrigerator. Store it in an airtight container and try to eat it within a few days for the freshest flavor.
Do not freeze this recipe. It doesn’t freeze well because when you thaw it, the texture is completely ruined.
