What Are Magic Bars
I’m not sure where magic bars originated, but they are usually made with a combination of chocolate, nuts, butterscotch, and coconut. There are lots of different variations and ways to make them, but shredded coconut flakes are a common factor in all of them.
In fact, I’ve made low-carb magic bars before. I made a holiday version – Keto Cranberry Pecan Magic Bars.
They are made with cranberries and pecans. Cranberries are a winter fruit with an extra-tart flavor.
Pecans are also a winter ingredient, commonly used in fall pies like pecan pie. So, I took that popular recipe and made a fall-themed one, and I’m thrilled to share it with you.
Low-Carb Magic Bars
There are only 6 grams net carbs in each magic bar! Go ahead and enjoy one or cut it in half and feel like you’re eating two of them.
They are made with an almond flour, pumpkin spice crust and topped with pumpkin filling. The result is a rich and creamy bar with a crispy, buttery crust.
They almost remind me of pumpkin pie bars. But the chocolate chips, coconut flakes, and chopped walnuts add incredible texture that you won’t find in a pumpkin pie.
Even so, if you want to top your magic bars with some sugar-free whipped cream, go right ahead!
Pumpkin Magic Bars
I didn’t just spice the crust with pumpkin pie spice, I used real pumpkin puree in the filling, too. When you buy pumpkin puree at the store, be careful!
Make sure you’re not buying pumpkin pie filing by mistake. Pumpkin pie filling has added spices and sugar in it.
So it won’t work on a keto diet. And look at the coconut flakes you buy, too.
Make sure you’re getting unsweetened coconut flakes. And if you don’t like walnuts, use chopped pecans as a substitute.
Dessert Bars
Dessert bars are the best types of treats to make for parties. You can cut them into tiny pieces and feed a crowd for very little.

How To Store Dessert Bars
Store the magic bars in an airtight container. Keep them in the pantry or on your countertop.
They will taste best when you keep them at room temperature instead of in the refrigerator. You can freeze the magic bars, too. Place the bars in a freezer-safe container.
Keep the in the freezer for up to six months. Then, put them in the refrigerator for about a day to let the magic bars thaw.

Ingredients
Crust:
- Almond Flour
- Vanilla
- Pumpkin Pie Spice
- Melted Butter
Filling:
- Heavy Whipping Cream
- Pumpkin Puree
- Swerve Confectioner’s Sugar Substitute
- Butter
- Xanthan Gum
- Lily’s Baking Chips
- Unsweetened Coconut Flakes
- Chopped Walnuts
Directions
Preheat the oven to 350 degrees. Mix together the ingredients for the crust until well combined.
Press the crust mixture into the bottom of a well greased 9×9 baking dish. Bake for 8 minutes, and allow to cool.
Place the heavy whipping cream and ⅓ cup Swerve into a pot over medium low heat. Bring the mixture just to a boil, and then reduce the heat to low.
Simmer uncovered for 30 minutes, or until the mixture is the consistency of condensed milk. Remove from the heat, and stir in the pumpkin puree, butter and xanthan gum.
Allow the mixture to cool to room temperature.
Pour the filling over the crust, and top with the chocolate chips, coconut flakes and walnuts. Bake for 20-25 minutes until set and cooked through.
Allow the mixture to cool completely before serving.
