Naturally sweet, this keto pumpkin chili is the tastiest chili recipe you’ll ever make! It will become a staple winter soup that you make whenever the weather gets colder.
Chili Without Beans
Can you make chili without beans? Yes, you can! That almost seems wrong, like in order to be chili it has to have pinto or black beans. But that’s just not true.
With my recipe, you’ll have a scrumptious and high-protein dinner without any beans (and their unwanted side effects).
What side effects do beans give people? Well, they are a common cause of inflammation in people. In fact, they aren’t allowed on Whole30 because they are difficult for our digestive enzymes to break down and extract nutritional value from.
Plus, beans also have phytates – which are anti-nutrients that make healthy minerals like zinc and iron unavailable to our bodies. Yikes!
Thankfully, pumpkin chili is even better for you without the beans. Eat a spoonful of it, and you won’t even miss them.
Pumpkin Chili
If you like sweeter chili recipes, then this is perfect for you! The pumpkin puree sweetens the chili easily without the need for other sweeteners.
If you want, you could add a little bit of Swerve brown sugar substitute, but you really don’t need to!
And there is nothing spicy about it! If you want your chili to have a bit more spice, I suggest adding some red pepper flakes to it. A little bit goes a long way.
Ground Turkey Chili
Using ground turkey as the main animal protein helps the chili taste lighter. It’s the perfect replacement for ground beef. Alternatively, you can use ground chicken or ground pork.
Each bowl of turkey chili has six grams net carbs. If you want to cut back on the carbs a little more, I suggest using a little less tomatoes and pumpkin puree. Those are the biggest source of carbs in the chili.
What To Eat With Chili
With the pumpkin puree in it, one bowl of keto pumpkin chili will really fill you up! You don’t have to eat anything with it to get full or eat a nutritious meal.
If you’re from Kansas, you’re probably used to eating cinnamon rolls with chili. If so, make this Keto Cinnamon Rolls Recipe. It tastes just like classic cinnamon rolls!
What about more veggies? Well, I think Easy Keto Broccoli Salad and Keto Cheesy Cauliflower Breadsticks taste delicious with the chili.
The broccoli salad is so easy to just whip up. And the breadsticks taste incredible with the chili.
How To Store Chili
Pumpkin chili is the perfect thing to add to your weekly meal prep. All you have to do is store the chili in an airtight container and keep it in the refrigerator for up to three days.
You can also freeze it, too! Put it in a freezer safe container and keep it frozen for up to six months. Reheat it on the stove in a sauce pan over medium heat – it’s so easy!
